Maison Bâtard är en fine dining-restaurang som drivs av den australiska restauratören Chris Lucas. Inredningen är ljus och elegant, med en stilren svartvit palett, och vi kände oss nästan malplacerade när vi satte oss i deras fina beiga lädersoffor. De hade bara en burgare på menyn, och den hette Le Cheeseburger och serverades endast på terassen. Utöver kött och bröd så innehöll den även ost, ketchup och chilimajonnäs, och kostade 29,5 AUD (185 kronor). Som tillbehör beställde vi in både pommes frites och haricots verts för cirka 15 AUD (95 kronor) vardera.

Vår burgaren såg kanske lite platt ut i all sin enkelhet, men den visade sig ändå ha gott om potential. Brödet var en riktigt fin brioche med tydlig smörsmak, men eftersom burgaren var ganska sparsmakad i innehållet så hade vi hoppats att brödet hade haft en frasigare yta för mer textur. Köttet hade en nästan fluffig konsistens och vi uppskattade att det var perfekt mediumstekt med en kärna som fortfarande var lite röd. Lite mer salt och peppar hade dock lyft köttsmaken ännu mer. Både ketchupen och chilimajonnäsen var ganska söta, men de bidrog med mycket smak utan att ta över för  mycket – även om chilimajonnäsen borde ha haft lite mer styrka. Vi gillade verkligen krämigheten från osten, som var riktigt välsmält. Och överlag så var detta en riktigt god burgare, även om den hade tjänat på fler krispiga texturer och lite syra. Pommes fritesen var tunna, krispiga och riktigt goda. De stekta gröna bönorna kändes fräscha de med, även om vi hade kunnat vara utan den stekta löken som låg på dem.

Vi gillar ändå Maison Bâtards enkla framtoning med sina burgare, och även om den var lite väl spartansk så uppskattar vi när restauranger vågar visa upp råvarorna utan att dölja dem bakom starka smaker som konkurrerar ut varandra.

Maison Bâtard is a fine dining restaurant run by Australian restaurateur Chris Lucas. The interior is light and elegant, with a clean black and white palette, and we almost felt out of place sitting in their beautiful beige leather sofas. They only had one burger on the menu, called Le Cheeseburger, which was only served on the terrace. In addition to meat and bread, it also contained cheese, ketchup and chilli mayonnaise, and it cost 29.5 AUD (20.5 USD). As a side dish, we ordered both french fries and haricots verts for about 15 AUD (10.5 USD) each.

Our burger may have looked a bit flat in its simplicity, but it still had a lot of potential. The bun was a really good brioche with a notable butter taste, but since the burger was so simple in its composition, we had hoped the bun would have been toasted more to add more texture. The meat had a nearly fluffy consistency, and we appreciated that it was perfectly cooked with a slightly red centre. However, we would have liked a bit more salt and pepper to enhance the beefiness. Both the ketchup and the chilli mayo were quite sweet, but they added a lot of flavour without overpowering the dish – although the chilli mayo could have been a bit spicier. We really appreciated the creamy cheese that was really well melted. All in all, it was a really good burger, even if it needed a bit more texture and a bit of acidity. The fries were thin, crispy and really tasty. The fried haricots verts were also fresh, although we could have done without the fried onions on top of them.

We really appreciated Maison Bâtard’s simple approach to their burger, and even though it was a bit too streamlined, we appreciate it when a restaurant dares to showcase their ingredients without hiding them behind overpowering flavours that compete with each other.

The Blique by Nobis hotel is located at Torsplan near S:t Eriksplan in Stockholm, and houses the three restaurants Arc Rooftop, Origo and Boketto. When we tested the burger at Boketto at the end of 2022, we got a burger that didn’t quite live up to our expectations, but after several reports that the burgers had improved, we went back for a second visit. The menu had one burger; the Blique Cheeseburger with a 130-gram beef patty, double burger cheese, chopped white onions, pickles, mustard and mayo. It cost 245 SEK (26 USD) including a generous portion of fries.

The burger was served in a lage brioche bun and contained a pretty thick patty with a nice crust and was a bit pink in the middle. It was well-seasoned and really tasty, but the meat flavors would have really benefited from a slightly larger patty. The well-melted cheese added both creaminess and flavor. The bun was nicely toasted on the inside and was sturdy, but it would have handled the mayo in the heel and the mustard in the crown even better if it had been toasted more. We really liked that they had compensated for the crunchy pickles’ sweetness by skipping ketchup in favor of just American yellow mustard, and the the flavor profile was really well-balanced with a lot of acidity. The white  onions also added flavor, and the only thing we missed here was that it should have been chopped a bit thicker for texture. The fries were very filling, but would have benefited from being fried a bit more so that they were more golden yellow. We liked that they came with both ketchup and a slightly mustardy mayo as well.

The Blique by Nobis burger was much better this time. If you’re staying at the hotel, the burger is an easy choice to have in their nice restaurant, but they are also worth checking out for non-guests in the Torsplan area.
