Elements öppnade 2018 och har sedan dess vuxit till tre enheter runt om i Sydney. Efter goda rekommendationer tog vi oss till enheten i Pyrmont som låg vackert vid vattnet. Vi hade blivit tipsade om att testa deras Fork & Knife Buffalo Cheeseburger med wagyukött, smält provolone, sallad, tomat, jalapeños, en svamp- och löksylt, blåmögelostranch, buffalo hot sauce och kalvsky. Vi beställde även en Smoked Bacon Burger med wagyukött, provolone, kanderat nötbacon, sallad, tomat, remouladsås och en honungs- och habanerosås. Båda burgarna kostade 38 AUD och i priset ingick portion rosmarinsaltade pommes frites. Vi försökte beställa burgarna rare, men fick veta att de inte serverar dem under medium-well, men efter lite förhandlande lovade de dock att försöka.

Burgarna såg minst sagt speciella ut. Båda burgarna hade rejäla wagyu-köttpuckar på 250 gram, och de var möra med en lätt grillad ton. Brödet var en hybrid mellan en pretzel och en milkbun, och var både fluffigt och smakrikt. Den något virala Fork & Knife hade ost både ovanpå köttet på brödet krona av någon outgrundlig anledning – samt en rejäl kniv rakt genom hela skapelsen. Burgaren låg också i en pöl av kalvsky, likt Pony Line-burgaren hos Holy Burger, men där slutade tyvärr liknelserna. Den hade alldeles för många ingredienser, som alla konkurrerade med varandra. Och resultatet blev förvånansvärt smaklöst, då inget inget trädde fram och inget fick ta plats. Smoked Bacon Burger led av exakt samma problem. Här hade de lagt osten ovanpå löken i stället, och kniven hade bytts ut mot en träpinne toppad med en cornichon. Men även här hände alldeles för mycket på samma gång, och den skarpa hettan från habanerosåsen slog nästan ut smaklökarna helt. Pommes fritesen var något oljiga, men rosmarinsaltet var gott.

Elements är en jättefin restaurang, men vi rekommenderar du väljer något annat än burgarna om du besöker dem.

Elements opened in 2018 and have since grown to three locations around Sydney. After some good recommendations, we headed to their Pyrmont location, which was beautifully situated by the water. We had been told to try their Fork & Knife Buffalo Cheeseburger with wagyu beef, melted provolone, lettuce, tomato, jalapeños, a mushroom and onion sauce, blue cheese ranch, buffalo hot sauce and veal jus. We also ordered the Smoked Bacon Burger with wagyu beef, provolone, candied bacon, lettuce, tomato, remoulade and a honey and habanero sauce. Both burgers cost 38 AUD (26.5 USD) and the price included a side of rosemary-salted fries. We tried to order the burgers rare, but were told they don’t serve them under medium-well, but after some negotiation, they promised to try.

The burgers looked quite unusual. Both burgers had a substantial 250-gram wagyu beef patty, which were tender with a slightly grilled tone. The bun was a pretzel and milk bun hybrid, and was both fluffy and flavourful. The viral Fork & Knife had cheese on top of the beef and also on the crown of the bun for some inexplicable reason – as well as a large knife right through the whole thing. The burger was also in a pool of veal jus, a bit like the Pony Line burger at Holy Burger, but that was where the similarities ended. It had far too many ingredients, all competing with each other. And the result was surprisingly bland, with nothing standing out and nothing getting a chance to shine. The Smoked Bacon Burger had the same problem. Here, they had put the cheese on top of the onions instead, and the knife had been replaced with a wooden skewer topped with a cornichon. But there was far too much going on here too, and the sharp heat from the habanero sauce dominated our taste buds. The fries were a bit oily, but the rosemary salt was tasty.

Elements is a very nice restaurant, but we recommend you choose something else than the burgers if you visit them.

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
