CPH Smash är en liten matvagn som står i utkanten av Köpenhamn, närmare bestämt i Frederiksberg. Vagnen drivs av två svenskar, och både ingredienser och smashtekniken var av modernt svenskt snitt. Vi beställde en dubbel Classic Cheese med cheddar, pickles, lök, senap, ketchup och majonnäs och en dubbel Mr Jalapeño med cheddar, pepper jack-ost, rödlök, jalapeños och jalapeñomajonnäs. Burgarna kostade 115 DKK (170 kronor) styck, och vi köpte även till pommes frites för 40 DKK (60 kronor).

Våra burgare var väldigt vackra, med tydlig inspiration av Stockholm Smash-stilen med en rejäl stekyta och en hel del svartpeppar. Båda burgarna var otroligt välkomponerade, och cheeseburgaren hade en utmärkt balans. Köttet bjöd på en frasig stekyta och ett saftigt inre, med hängmörade toner. Lite mer salt och peppar hade inte skadat dock. Deras potatis-briochebröd var välrostat på insidan, och både mjukt och följsamt på utsidan. Vi uppskattade krispigheten från deras pickles, även om den tydliga sötman störde något. Mr Jalapeño bjöd på en värmande hetta som var välbalanserad. Deras tunt skivade jalapeños var mycket starka, och även jalapeñodressingen hade ett imponerande tryck i smakerna. Resultatet var en ypperlig chiliburgare som bjöd på tre sorters hetta som kompletterade varandra riktigt bra. Pommes fritesen var kilformade och väldigt krispiga, och fungerade som utmärkta dippverktyg för jalapeñodippen vi köpte för 15 DKK (20 kronor).

CPH Smash har skakat om den danska burgarscenen rejält, och deras smashburgare är numera våra favoriter i Danmarks huvudstad. Vi hoppas att de fortsätter att utveckla sitt koncept och både utökar sina öppettider och hittar en lite mer lättillgänglig plats att stå på, för det här är exceptionella burgare som förtjänar att upplevas.

CPH Smash is a small food cart located on the outskirts of Copenhagen, more specifically in Frederiksberg. The cart is run by two Swedes, and both the ingredients and the smash technique were of a modern Swedish style. We ordered a double Classic Cheese with cheddar, pickles, onions, mustard, ketchup and mayo and a double Mr Jalapeño with cheddar, pepper jack cheese, red onions, jalapeños and jalapeño mayo. Our burgers cost DKK 115 (17 USD) each, and we also bought fries for DKK 40 (6 USD).

Our burgers were very beautiful, clearly inspired by the Stockholm Smash style with a deep crust and a lot of black pepper. Both our burgers were expertly composed, and our cheeseburger was well-balanced. The patties were crispy on the outside with a juicy interior, with dry-aged flavours. A little more salt and pepper would not have hurt though. Their potato brioche bun was nicely toasted on the inside, and both soft and squishy on the outside. We appreciated the crunchiness of their pickles, although the distinct sweetness was slightly distracting. Mr Jalapeño offered a warming heat that worked wonders. Their thinly sliced jalapeños were very hot, and even the jalapeño dressing had an impressive burst of flavour. The result was a superb chilli burger that offered three kinds of heat that complemented each other really well. The fries were wedge-shaped and very crispy, and served as excellent dipping tools for the jalapeño dip we bought for DKK 15 (2 USD).

CPH Smash has really shaken up the Danish burger scene, and their smash burgers are now our favourites in the Danish capital. We hope they continue to develop their concept and both extend their opening hours and find a more accessible location, because these are exceptional burgers that deserve to be experienced.

Bar Luca is a cool and loud bar just a stone’s throw from the Opera House in central Sydney. They have been going viral for a while with one of their campaign burgers, which now has a permanent place on their menu. So when we were there, it was the obvious choice. The burger was called Blame Canada and consisted of a single beef patty, American cheese, maple syrup-glazed bacon, maple syrup aioli, poutine and fries inside the burger. The price was 20 AUD (14 USD).

Our burger still looked pretty good when it arrived, shiny from the maple syrup and with a patty with a decent crust. The beef tasted fine, even if it was a bit burnt in some places and would have benefited from a looser texture. The crown of the bun was a bit squashed, but it still held together surprisingly well and tasted great. The bacon was also unexpectedly crispy, and we liked the nice and flavourful maple syrup glaze. But it was very sweet overall with all the maple syrup, which literally dripped from the burger. This made the whole burger really sticky and quite difficult to handle – even if it also meant that we ate the whole thing at once. The fries that were under the patty itself were very soft and completely lacked crunch, probably because they were steamed by being placed directly in the burger. And we would have really preferred a bit larger cheese curds in the poutine, as the texture was a bit unappealing.

Blame Canada sounded very interesting on paper, and we can see why the burger has gone viral and become so popular. And even if everything was alright, it had too many technical mistakes to become a real favourite. But if you are in the mood for a sweet and sticky burger while listening to some loud music, Bar Luca is there for you.

Royal Stacks is a Melbourne-based burger chain that was founded in 2016 after their founder Dani travelled to the US and got a healthy dose of inspiration. They are still expanding, and currently have more than 10 restaurants that are decorated with plenty of well-known pop culture references. The five beef burgers on the menu are clearly inspired by Shake Shack, but with a slightly cooler attitude. We ordered a Bacon Bacon; a double burger with cheese, caramelised onions, double bacon, pickles, ketchup and mustard for 23 AUD (16.5 USD).

Our burger looked good, but we were a bit worried about the large amount of ketchup that was piled on top of the bacon. Fortunately, we were pleasantly surprised by how well the ketchup tied the flavours together, and the sweetness and intense tomato flavour really made their mark here. The beef patties were tender, tasty and well-seasoned, but the bun was a bit too soft and should have been toasted a lot more. Fortunately, it held everything together well, so it wasn’t a big problem. On the ingredients front, the cheese provided a welcome creaminess, and we also liked the strong dill flavour of the pickles – although we would have preferred them to be thicker sliced and to have had more of them. They were already gone halfway through the burger. The bacon was a bit too soft and would have benefited from being crisper, but despite the slightly pale appearance, it was cooked pretty well. The caramelised onions were also a bit too soft, and we would have preferred raw onions here for a more interesting texture. Overall, the burger had well-balanced proportions, although everything was a bit softer than we would have liked.

Royal Stacks is a nice Australian fast casual chain that serves well made and affordable burgers in a cool environment. They are definitely worth checking out the next time you’re in Melbourne.
