Slam’s drivs av Sam Lambert, som har många järn i elden. Han driver bland annat den flerfaldigt prisbelönta Slam’s Taco och har tagit över köket på restaurangen Babble i Brighton and Hove. Vi testade deras popup-koncept Slam’s BBQ när vi besökte Burger Fest UK, där de var den enda restaurangen som tog barbecueapproachen och grillade sina burgare. Vi beställde en Cheeseburger med en enkel köttpuck gjord på hängmörat kött, American cheese, pickles, coleslaw och en burgardressing för 9 GBP (115 kronor).

Burgaren såg lite trevligt hemlagad ut i all sin enkelhet. Brödet var ganska blekt, men hade grillats på rejält på insidan och höll ihop bra trots att det gav burgaren lite oldschool-känsla. Det grillade köttet gav burgaren en tydlig karaktär och en riktigt god smak av det hängmörade köttet. Men konsistensen blev däremot lite segare än på flera av de stekta burgarna på festivalen, och det blev lite tuggigt överlag. Men det fanns mycket annat att gilla, och de dubbla skivorna american cheese var krämiga och smakrika. Smakerna var överlag intensiva, och utöver det goda köttet fick vi salta och smakrika pickles och en coleslaw med mycket senap och rejält med syra. Tillsammans gav det burgaren en frisk och somrig profil, där sälta och syra tog stor plats.

Slam’s saknade lite av finessen och balansen som de bästa burgarna på Burger Fest UK hade, men kompenserade med mycket smak och en tydlig grillad karaktär. Vi uppskattade verkligen att de tagit sin egen väg, och ser fram emot att testa deras tacos i framtiden. Vårt utlåtande av Babble kommer dessutom att publiceras snart som en egen recension.

Slam’s is run by Sam Lambert, who has plenty of ongoing projects, such as the multi-award-winning Slam’s Taco and taking over the kitchen at Babble in Brighton and Hove. We tried their Slam’s BBQ popup concept when we visited Burger Fest UK, where they were the only restaurant to take a barbecue approach and grill their burgers. We ordered a Cheeseburger with a single dry-aged beef patty, American cheese, pickles, coleslaw and burger sauce for 9 GBP (12 USD).

The burger had a pleasantly homemade look in all its simplicity. The bun was quite pale but had been thoroughly grilled on the inside, and held together well despite giving the burger a slightly old-school feel. The grilled beef gave it plenty of character and the dry-aged flavour was really nice. The texture was a little chewier than several of the smashed burgers at the festival though, and was a bit too chewy. But there was plenty else to like, and the two slices of American cheese were creamy. The flavours were intense throughout, and alongside the tasty beef we got salty and intense pickles and a coleslaw with plenty of mustard and a lot of acidity. Together, they gave the burger a fresh, summery profile where saltiness and acidity played a big part.

Slam’s lacked some of the finesse and balance of the best burgers at Burger Fest UK, but made up for it with it’s distinct BBQ characteristics. We really appreciated that they had taken their own approach, and look forward to trying their tacos in the future. Our verdict on Babble will also be published soon in a separate review.

🇸🇪 Mother of Wagon ★★★★☆

Mother of Wagon opened by Arboga’s train station in the summer of 2026, and is actually run by the mother of the owner of The Wagon Burgers & Brews in Stockholm. Besides the clever name, they also offered four burgers, all of which could be made vegetarian. We ordered a Cheeseburger with two 100-gram mustard-smashed beef patties, cheddar, onions, pickles, ketchup and dressing in a brioche bun. It cost 130 SEK (14 USD), and we also added fries for 30 SEK (3 USD).

The burger looked really good when it arrived, even if it had been assembled somewhat hastily with a lot of sauce. The flavours worked well, but all that sauce made it a little difficult to eat as the patties kept sliding around. The beef from a local farm in Örebro was generously seasoned and had plenty of flavour. However, it had been slightly overworked and was a bit too compact, and we would’ve preferred a more airy texture. The cheese had melted nicely over the patties, and we also appreciated that the fluffy bun had been nicely toasted on the inside, helping it hold together throughout the meal. We liked the finely chopped onions, while the pickles were crunchy, if slightly sweet. Although the mustard smash added plenty of flavour to the beef, we would’ve appreciated the acidity of American yellow mustard instead of the fairly sweet burger sauce. The fries came in a very generous portion and were thick and well-cooked, but slightly too heavily salted.

Mother of Wagon has managed to build a really solid foundation in just a few months, and the friendly staff also contributed to the experience. We’re really happy that it’s now possible to get a good burger in central Arboga.
