Bolland & Crust har deltagit på matfestivaler sedan 2009, med fokus på barbecue och burgare. Och 2023 öppnade de sin egen restaurang i norra London där de fortsätter med samma köttfokus. Vi fick chansen att testa deras burgare på Belgrade Burger Festival 2024, där de var en av tre internationella gäster. Vi beställde deras The Mac Daddy-burgare för 950 RSD (90 kronor) med hängmörat kött, ost, lök, pickles, en het sweet chili-sås och deras egen dressing. På inrådan av den karismatiska ägaren lade vi även till bacon på vår burgare.

Burgaren såg väldigt aptitlig ut med ett gyllenbrunt sesamtäckt bröd och mycket smält ost. Brödet var följsamt i handen och hade fått en fin rostning som höll ihop allt väldigt bra. Detta var dessutom ett mycket bättre bröd än många av de andra burgarna hade att tillgå på festivalen. Köttet var gott men lite översaltat och även något svårtuggat, och vi hade gärna sett att det var både luftigare och saftigare. Det generösa osttäcket saknade tyvärr den där krämigheten vi eftersöker på en burgare, och nu var det mest ett ganska segt osttäcke ovanpå allt. Picklesen hade en fin syra som lyckades bryta genom de feta smakerna, och baconet tillförde lite välbehövlig textur och sälta. Vi hoppades att deras heta sweet chili-sås skulle vara lite mer spännande, men den var ganska anonym i sammanhanget.

Överlag så bjöd burgarna på Bolland & Crust på trevliga smaker och det märktes att de hade tänkt till. Det var mest texturproblemen som satte käppar i hjulet. Vi ser dock fram emot att besöka deras restaurang i London för att se om de har åtgärdat dessa problem på hemmaplan.

Bolland & Crust have participated in food festivals since 2009, with a focus on barbecue and burgers. And in 2023, they opened their own restaurant in North London where they serve the same kind of dishes. We had the chance to try their burgers at the Belgrade Burger Festival 2024, where they were one of three international guests. We ordered their The Mac Daddy burger for 950 RSD (9 USD) with dry-aged beef, cheese, onions, pickles, a hot sweet chilli sauce and their own dressing. On the advice of the charismatic owner, we also added bacon to our burger.

Our burger looked very appetising with a golden brown sesame covered bun and lots of melted cheese. The bun was soft, nicely toasted and held everything together very well. This was also a much better bun than many of the other burgers available at the festival. The patty was tasty but a little too salty and also a bit on the chewy side, and we would have liked it to be both looser and juicier. The generous layer of cheese unfortunately lacked that creaminess we prefer on a burger, and became a chewy cheese layer on top of everything. The pickles had a nice acidity that managed to break through the fatty flavours, and the bacon added some much needed texture and saltiness. We were hoping their hot sweet chilli sauce would be a little more exciting, but it was pretty anonymous.

Overall, the burgers at Bolland & Crust offered pleasant flavours and it was obvious that they had given it some thought. It was mostly the texture issues that held them back. We look forward to visiting their London restaurant to see if they have addressed these issues in their home country.

The Blique by Nobis hotel is located at Torsplan near S:t Eriksplan in Stockholm, and houses the three restaurants Arc Rooftop, Origo and Boketto. When we tested the burger at Boketto at the end of 2022, we got a burger that didn’t quite live up to our expectations, but after several reports that the burgers had improved, we went back for a second visit. The menu had one burger; the Blique Cheeseburger with a 130-gram beef patty, double burger cheese, chopped white onions, pickles, mustard and mayo. It cost 245 SEK (26 USD) including a generous portion of fries.

The burger was served in a lage brioche bun and contained a pretty thick patty with a nice crust and was a bit pink in the middle. It was well-seasoned and really tasty, but the meat flavors would have really benefited from a slightly larger patty. The well-melted cheese added both creaminess and flavor. The bun was nicely toasted on the inside and was sturdy, but it would have handled the mayo in the heel and the mustard in the crown even better if it had been toasted more. We really liked that they had compensated for the crunchy pickles’ sweetness by skipping ketchup in favor of just American yellow mustard, and the the flavor profile was really well-balanced with a lot of acidity. The white  onions also added flavor, and the only thing we missed here was that it should have been chopped a bit thicker for texture. The fries were very filling, but would have benefited from being fried a bit more so that they were more golden yellow. We liked that they came with both ketchup and a slightly mustardy mayo as well.

The Blique by Nobis burger was much better this time. If you’re staying at the hotel, the burger is an easy choice to have in their nice restaurant, but they are also worth checking out for non-guests in the Torsplan area.
