Burger Werk ligger i Eppingen, en mindre stad i södra Tyskland. Vi besökte dem under finalen av The Champions Burgers i München, där de serverade en burgare vid namnet Creamy Duo. Den innehöll två smashade köttpuckar, cheddar, vit ostkräm, kryddat bacon, karamelliserad lök och hemgjord sås. Festivalpriset för burgaren var 13,5 euro (150 kronor).

Vår burgare innehöll massor av sås, och hade en rejäl stekyta på köttet. Men när vi började äta insåg vi snabbt att köttet var ojämnt stekt; då den ena köttpucken var välstekt med en glansigt fin crust och den andra var mycket segare utan samma stekyta. Även brödet var ojämnt rostat och hälen blev ganska snabbt väldigt blöt. Brödet var dessutom alldeles för sött, så pass mycket att det störde hela smakupplevelsen. Köttet var åtminstone välkryddat, och den hemgjorda såsen smakade som en god burgardressing. Men det stora problemet var den vita ostkrämen, som var grynig och lämnade en otrevlig textur i munnen. De hade också blandat baconet i krämen, vilket gjorde den ännu klumpigare och fick den att påminna om syrad mjölk. Baconet smakade heller inte riktigt som bacon utan mer som pastırma, en typ av turkisk lufttorkad biff. Smaken var visserligen god i sig, men det var inte vad vi förväntade oss eller eftertraktade i en burgare.

Trots en bra start så gjorde Burger Werk alldeles för många missar, och vi hade faktiskt svårt att äta upp hela burgaren – mycket på grund av den där ostkrämen. Och namnet till trots så var burgaren tyvärr allt annat än krämig.

Burger Werk is located in Eppingen, a small town in the south of Germany. We visited them during the final of The Champions Burgers in Munich, where they served their Creamy Duo burger with two smashed beef patties, cheddar, white cheese cream, spiced bacon, caramelised onions and homemade sauce. The festival price for the burger was 13.5 USD (15 USD).

Our burger had lots of sauce, and the patties had a nice crust. But when we started eating, we quickly realised that the meat was unevenly cooked; as one patty had a nice and shiny crust and the other was much tougher without the same crispiness. The bun was also unevenly toasted and the heel became wet quite quickly. The bun was also way too sweet, so much so that it interfered with the whole flavour experience. At least the meat was well seasoned, and the homemade sauce tasted like a good burger dressing. But the big problem was the white cheese cream, which was gritty and left an unpleasant texture in our mouths. They had also mixed the bacon into the cream, making it even more lumpy and reminiscent of soured milk. The bacon also tasted less like bacon and more like pastırma, a type of Turkish air-dried beef. While the flavour was alright in itself, it wasn’t what we were expecting or looking for in a burger.

Despite a good start, Burger Werk made too many mistakes, and we had a hard time finishing our meal. And despite the name, this was unfortunately anything but creamy.

The Blique by Nobis hotel is located at Torsplan near S:t Eriksplan in Stockholm, and houses the three restaurants Arc Rooftop, Origo and Boketto. When we tested the burger at Boketto at the end of 2022, we got a burger that didn’t quite live up to our expectations, but after several reports that the burgers had improved, we went back for a second visit. The menu had one burger; the Blique Cheeseburger with a 130-gram beef patty, double burger cheese, chopped white onions, pickles, mustard and mayo. It cost 245 SEK (26 USD) including a generous portion of fries.

The burger was served in a lage brioche bun and contained a pretty thick patty with a nice crust and was a bit pink in the middle. It was well-seasoned and really tasty, but the meat flavors would have really benefited from a slightly larger patty. The well-melted cheese added both creaminess and flavor. The bun was nicely toasted on the inside and was sturdy, but it would have handled the mayo in the heel and the mustard in the crown even better if it had been toasted more. We really liked that they had compensated for the crunchy pickles’ sweetness by skipping ketchup in favor of just American yellow mustard, and the the flavor profile was really well-balanced with a lot of acidity. The white  onions also added flavor, and the only thing we missed here was that it should have been chopped a bit thicker for texture. The fries were very filling, but would have benefited from being fried a bit more so that they were more golden yellow. We liked that they came with both ketchup and a slightly mustardy mayo as well.

The Blique by Nobis burger was much better this time. If you’re staying at the hotel, the burger is an easy choice to have in their nice restaurant, but they are also worth checking out for non-guests in the Torsplan area.
