I hörnet av det anrika Hotel Bristol ligger Bristol Pub, som på senare tid har seglat upp som en riktig burgarsnackis i Oslo. På menyn finns fem olika köttburgare, och vi beställde en Bacon Triple Onion med cheddar, bacon, karamelliserad lök, rostad lök, rödlök, pickles och burgardressing för 205 NOK (195 kronor) samt en Hot Stuff med cheddar, lök, jalapeñorelish, pickles och grön chilimajonnäs för 195 NOK (185 kronor).

Burgarna såg massiva ut, mycket tack vare de ganska tjocka (men ändå smashade) köttpuckarna och det stora brödet. Vi uppskattade den rejäla köttmaken från de något kompakta köttpuckarna, som hade en subtilt hängmörad ton som låg kvar efter varje tugga. Smakbilden på båda burgarna var överraskande välbalanserad, och alla ingredienserna tog plats med tydlig smak. Vi uppskattade särskilt Hot Stuff, där hettan från den gröna chilimajonnäsen och jalapeñorelishen rundade av smakerna på ett mycket sympatiskt sätt. Brödet inte heller stå emot alla safter, och hälen av brödet blev ganska soggigt och hade svårt att hålla ihop allting. Värt att notera var att burgarna var väldigt svåra att äta med händerna på ett värdigt sätt. Alla andra på restaurangen åt med kniv och gaffel, och efter att ha kämpat med händerna ett tag så fick vi också anse oss besegrade och tog upp besticken för att få i oss det sista. Pommes fritesen för 65 NOK (60 kronor) var verkligen jättegoda, med en rejäl fritering och saltning som satte guldkant på måltiden.

Bristol Pub serverar rejäla och klassiska pubburgare med allt vad det innebär, och även om det finns en hel del detaljer att finslipa på – både när det gäller brödet och köttet de använder – så gick vi därifrån både mätta och belåtna.

On the corner of the historic Hotel Bristol we found the Bristol Pub, which of late has become a popular burger spot in Oslo. Our menu offers five different beef burgers, and we ordered the Bacon Triple Onion with cheddar, bacon, caramelised onions, roasted onions, red onions, pickles and burger sauce for NOK 205 (NOK 195) and the Hot Stuff with cheddar, onions, jalapeño relish, pickles and green chilli mayonnaise for NOK 195 (NOK 185).

The burgers looked massive, thanks to the rather thick (but still smashed) beef patties and the large bun. We appreciated the deep beefiness from the somewhat compact beef patties, which had a subtle dry aged note that lingered after each bite. The flavour profile of all their burgers was surprisingly well-balanced, with all the ingredients coming through with a distinct taste. We particularly enjoyed the Hot Stuff, where the heat from the green chilli mayonnaise and jalapeño relish rounded off the flavours very nicely. The bun didn’t stand up to all the juices though, and the heel of the bun was quite soggy and had a hard time holding everything together. In fact, both burgers were very difficult to eat with our hands in a dignified way. Everyone else in the restaurant ate with a knife and fork, and after struggling with our hands for a while, we also had to consider ourselves defeated and picked up the cutlery to finish our meal. The fries for NOK 65 (USD 6) were delicious, well-cooked and salted, giving our meal a great finishing touch.

Bristol Pub serve large, classic pub burgers and even though there’s room for improvement – both in terms of the bun and how they handle the beef – we left the pub feeling full and satisfied.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
