Första gången vi besökte Døgnvill Burger var redan 2015, och då tyckte vi att den lilla premiumkedjan med restauranger i Oslo och Stavanger serverade klart godkända burgare, i alla fall för att vara i Norge. Nu har det gått tio år, och vi besökte deras relativt nya lokal i Bjørvika vid hamnen nära Oslos tågstation, som var utsökt inredd med otroligt skön akustik och en behaglig inredningsstil med mycket mörkt trä. Denna gång beställde vi en Bacon & Cheese med norsk cheddar, torrsaltat bacon, tomat, rödlök, sallad och majonnäs för 239 NOK (220 kronor), och den lite mer unika Rampete Ruth med parmaskinka, friterad squash, ruccolasallad, cheddar- och parmesankräm och tomataioli för 259 NOK (240 kronor). Till detta beställde vi även in en portion pommes frites för 79 NOK (75 kronor).

Men om lokalerna kändes moderna så såg våra burgare tyvärr riktigt gamla ut. Båda burgarna var genomborrade av en pinne, och brödets krona var hårdgrillat på utsidan samtidigt som hälen var rejält tjock. Första tuggan var svåräten, med osmält ost som lade sig som ett täcke över den tjocka köttpucken. De grillade 160-gramsköttpuckarna var väldigt kompakta, men de var åtminstone smakrika och välkryddade. Rampete Ruth var riktigt sölig, och den innehöll en – visserligen ganska god – parmesankräm som hade en trist, grynig konsistens. Vi uppskattade i alla fall det knapriga baconet i Bacon & Cheese, som var den bättre burgaren av de två trots ganska oinspirerade grönsaker. Annars var picklesen som vi fick vid sidan av höjdpunkten, med sin krispighet och chilihetta. Pommes fritesen smakade okej, men var inte värda sitt höga pris.

Døgnvill är det norska ordet för dagvill – att inte veta vilken veckodag det är, men det känns som att de inte ens vet vilket år det är längre. Døgnvill Burger brukade vara en av de bättre burgarna i Oslo, men nu har tiden gått ifrån dem.

We first visited Døgnvill Burger back in 2015, and back then we thought the small premium chain with restaurants in Oslo and Stavanger served pretty decent burgers, at least for Norway. A decade later and we visited their location in Bjørvika by the harbour near Oslo’s train station, which had an exquisite interior with incredibly nice atmosphere and cosy interiors with lots of dark wood. This time we ordered a Bacon & Cheese with Norwegian cheddar, dry salted bacon, tomato, red onions, lettuce and mayo for 239 NOK (22 USD), and the slightly more unique Rampete Ruth with Parma ham, fried courgette, rocket salad, cheddar and parmesan cream and a tomato aioli for 259 NOK (24 USD). We also ordered a portion of fries for 79 NOK (7.5 USD).

However, if the premises felt modern, our burgers unfortunately looked really old. Both our burgers were pierced by a skewer, and the crown of the bun was hard-grilled on the outside while the heel was really thick. The first bite was difficult to eat, with waxy cheese covering the thick beef patties like a blanket. The grilled 160-gram beef patties were very compact, but at least they were flavoursome and well-seasoned. Rampete Ruth was really sloppy, and the nice parmesan cream had an unpleasant, gritty texture (even though it tasted quite nice). We did appreciate the crispy bacon in the Bacon & Cheese, which was the best burger of the two despite the rather uninspired vegetables. Otherwise, the pickles we got on the side were the highlight, with their crunchiness and chilli heat. The fries tasted decent, but weren’t worth their high price.

Døgnvill is the Norwegian word for not knowing what day of the week it is, but it feels like they don’t know what year it is any more either. Døgnvill Burger used to serve one of the better burgers in Norway, but time really has passed them by.

Døgnvill Bar & Burger har tre restauranger i Norge. En finns i Stavanger och två i Oslo, varav den ena ligger i den futuristiska stadsdelen Tjuvholmen och den andra i det hippa Vulkan-området.

Allt kött i burgarna kommer från den anrika slaktaren Albert Idsøe i Stavanger, där det mals och formas till köttpuckar innan det levereras till restaurangerna. Burgarna står såklart i centrum på menyn, och det gick inte att värja sig mot deras Hot Mama, med barbecuesåsglacerad bacon, stekt lök, sallad och en sås gjord på parmesan, cheddar och jalapeños för 169 norska kronor.

Med den smakkombinationen är det ingen större överraskning att burgaren var god, men själva köttet var lite tuggigare än vad vi hade förväntat oss. Det var dock mediumstekt, och utmärkt kryddat. Dessutom var baconet krispigt, rökigt och sött, och ostsåsen bidrog med en krämig hetta. Brödet var lite för grovt, men var åtminstone uppvärmt och smakade godare än vi trodde vid första anblick. Fast det riktiga guldkortet var sötpotatispommesfritesen, trots priset på 49 norska kronor. De var ljuvligt krispiga på utsidan och krämigt söta inuti.

Prislappen var något högre än på andra burgarställen, men ändå helt godkänt för att vara i Norge.

With two locations in Oslo, and one in Stavanger, Døgnvill Bar & Burger impressed us with their vast menu. All of their meat comes fresh from the same butcher in Stavanger, and is excellently seasoned – although a bit chewy despite being cooked medium. The barbecue sauce glazed bacon was a real treat, but the real star here were the somewhat pricey sweet potato fries. The price point was slightly higher here than at other burger places in Oslo, but still reasonable for a Norwegian restaurant.

Bar Luca is a cool and loud bar just a stone’s throw from the Opera House in central Sydney. They have been going viral for a while with one of their campaign burgers, which now has a permanent place on their menu. So when we were there, it was the obvious choice. The burger was called Blame Canada and consisted of a single beef patty, American cheese, maple syrup-glazed bacon, maple syrup aioli, poutine and fries inside the burger. The price was 20 AUD (14 USD).

Our burger still looked pretty good when it arrived, shiny from the maple syrup and with a patty with a decent crust. The beef tasted fine, even if it was a bit burnt in some places and would have benefited from a looser texture. The crown of the bun was a bit squashed, but it still held together surprisingly well and tasted great. The bacon was also unexpectedly crispy, and we liked the nice and flavourful maple syrup glaze. But it was very sweet overall with all the maple syrup, which literally dripped from the burger. This made the whole burger really sticky and quite difficult to handle – even if it also meant that we ate the whole thing at once. The fries that were under the patty itself were very soft and completely lacked crunch, probably because they were steamed by being placed directly in the burger. And we would have really preferred a bit larger cheese curds in the poutine, as the texture was a bit unappealing.

Blame Canada sounded very interesting on paper, and we can see why the burger has gone viral and become so popular. And even if everything was alright, it had too many technical mistakes to become a real favourite. But if you are in the mood for a sweet and sticky burger while listening to some loud music, Bar Luca is there for you.

Royal Stacks is a Melbourne-based burger chain that was founded in 2016 after their founder Dani travelled to the US and got a healthy dose of inspiration. They are still expanding, and currently have more than 10 restaurants that are decorated with plenty of well-known pop culture references. The five beef burgers on the menu are clearly inspired by Shake Shack, but with a slightly cooler attitude. We ordered a Bacon Bacon; a double burger with cheese, caramelised onions, double bacon, pickles, ketchup and mustard for 23 AUD (16.5 USD).

Our burger looked good, but we were a bit worried about the large amount of ketchup that was piled on top of the bacon. Fortunately, we were pleasantly surprised by how well the ketchup tied the flavours together, and the sweetness and intense tomato flavour really made their mark here. The beef patties were tender, tasty and well-seasoned, but the bun was a bit too soft and should have been toasted a lot more. Fortunately, it held everything together well, so it wasn’t a big problem. On the ingredients front, the cheese provided a welcome creaminess, and we also liked the strong dill flavour of the pickles – although we would have preferred them to be thicker sliced and to have had more of them. They were already gone halfway through the burger. The bacon was a bit too soft and would have benefited from being crisper, but despite the slightly pale appearance, it was cooked pretty well. The caramelised onions were also a bit too soft, and we would have preferred raw onions here for a more interesting texture. Overall, the burger had well-balanced proportions, although everything was a bit softer than we would have liked.

Royal Stacks is a nice Australian fast casual chain that serves well made and affordable burgers in a cool environment. They are definitely worth checking out the next time you’re in Melbourne.
