MBH Hamburgueseria är en burgarkedja som har restauranger i flera städer i Portugal, och även i Madrid. Vi besökte en av deras restauranger i Lissabon, och vi blev nästan överväldigade av deras svårnavigerade (men roliga) burgarmeny. Vi beställde in en Alcântara med cheddar, bacon, rödlök, pickles, senap och ketchup för 13,5 euro (150 kronor), samt en Campo de Ourique med Roquefortost, grillad ananas, karamelliserad lök, groddar och plommonmajonnäs för 14,2 euro (155 kronor). Båda burgarna innehöll en köttpuck på 180 gram, och i priset ingick även pommes frites.

Våra rejäla burgare serverades visserligen med en onödig pinne som hade genomborrat allting, men när vi hade tagit bort den så satt själva burgarna bra i handen. Brödet var visserligen mjukt och följsamt, men också lite för massivt och tungt. Därför tog det över en hel del. Köttet var saftigt med en fin rosa kärna och hade en trevlig grillad smak som vi verkligen uppskattade. Vår Alcântara-burgare, som var en cheeseburgare med bacon, hade en trevlig textur och rejält med sälta från baconet. Picklesen tillförde en hel del krispighet, men vi gillade inte att de var längdskivade då vissa tuggor saknade pickles helt. Smakbilden var på gränsen till för enkel, och det kändes som att något saknades för att göra den mer intressant – kanske något med högre syrlighet. Campo de Ourique var raka motsatsen, med en maffig smakbild tack vare blåmögelosten, ananasen och plommonmajonnäsen. Kombinationen fungerade förvånansvärt bra, men allt det söta tog tyvärr överhanden. Vi tyckte inte heller att böngroddarna riktigt hörde hemma på burgaren, främst på grund av texturen. Pommes fritesen var krispiga och smakade gott, och den medföljande aiolidippen var dundergod – vilket nästan alltid är fallet i Portugal.

MBH Hamburgueseria serverar ändå klart godkända burgare, och vi applåderar initiativet att testa nya idéer. Men det finns fortfarande en hel del att slipa på.

MBH Hamburgueseria is a burger chain with restaurants in several cities in Portugal, as well as in Madrid. We visited one of their restaurants in Lisbon and were almost overwhelmed by their confusing (but still fun) burger menu. We ordered an Alcântara with cheddar, bacon, red onions, pickles, ketchup and mustard for 13.50 USD (16 USD), and a Campo de Ourique with Roquefort cheese, grilled pineapple, caramelised onions, sprouts and plum mayo for 14.2 EUR (16.5 USD). Both our burgers contained a 180-gram beef patty, and the price also included french fries.

Our big burgers came with an unnecessary skewer that had pierced through everything, but once we took it out, the burgers themselves were easy to hold. The bun was soft and pliable, but also a little too thick and heavy. That’s why it took up quite a bit of space. The patty was juicy with a nice pink centre and had a pleasant grilled flavour that we really appreciated. Our Alcântara burger, which was a cheeseburger with bacon, had a nice texture and plenty of saltiness from the bacon. The pickles added a lot of crunch, but we didn’t like that they were sliced lengthwise, as some bites were completely missing pickles. The flavour profile was almost too simple, and it felt like something was missing to make it more interesting – perhaps something with a higher acidity. Campo de Ourique was the complete opposite, with a rich flavour thanks to the blue cheese, pineapple and plum mayonnaise. The combination worked surprisingly well, but was not without its problems as the sweetness took over. We also didn’t think the bean sprouts really belonged on the burger, mainly because of their texture. The french fries were crispy and tasty, and the accompanying aioli dip was delicious – which is almost always the case in Portugal.

MBH Hamburgueseria definitely serve acceptable burgers, and we applaud their initiative to try out new ideas. But there’s still quite a bit for them to work on.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
