Sinner Smash har två restauranger i norra delarna av Lissabon, och följer den rådande burgartrenden som håller Portugal i sitt järngrepp. Här får du alltså supersmashade burgare, med en minimalistisk meny och ett tydligt bildspråk. De har en riktig restaurang, men vi besökte deras enhet i shoppingcentret Saldahna Residence. Där möttes vi av affischer med budskapet att vi alla är syndare, och även en kort burgarmeny bestående av två olika smashburgare. Vi beställde såklart båda: en Smash Burger med american cheese, lök, pickles, senap och ketchup för 9 euro (100 kronor) och en House Smash med american cheese, sallad och burgardressing för 9,5 euro (105 kronor). Vi uppgraderade även till en meny med pommes frites och en läsk för ytterligare 4 euro (45 kronor).

Våra burgare var ganska platta, med bröd som värmts på ordentligt på både insidan och utsidan. Detta gjorde åtminstone att det höll ihop väldigt väl, och det smakade faktiskt riktigt gott. Men på något sätt var det också ganska degigt, och kontrasten mellan ett välrostat yttre och ett tuggigt inre var lite lustigt. De dubbla köttpuckarna hade en trevlig stekyta, och var saftiga om än något översaltade. Vi gillade att de hade hackat picklesen i Smash Burger, eftersom vi fick en rejäl mängd krispiga och smakrika pickles i varje tugga. Salladen i House Burger var också väldigt fräsch, men den var lite ingrediensfattig och vi hade föredragit en kombination av båda burgarnas ingredienser. Pommes fritesen var väldigt goda och friterade precis lagom mycket, så att de bidrog med massor av textur och smak. Aiolin var också väldigt god, som den brukar vara i Portugal.

Sinner Smash serverar hyfsade burgare, men vi hade önskat att smakerna poppade lite mer. Det här var mest lite lagom syndigt.

Sinner Smash have two restaurants in northern Lisbon, and follow the current burger trend that has Portugal in its iron grip. Here you get super-smashed burgers, with a minimalist menu and distinct branding. They have a proper restaurant, but we visited their unit in the Saldahna Residence shopping centre. There we were greeted by posters with the message that we are all sinners, and a short burger menu consisting of two different smash burgers. We ordered both, of course: a Smash Burger with American cheese, onion, pickles, ketchup and mustard for 9 EUR (10.5 USD) and a House Smash with American cheese, lettuce and burger sauce for 9.5 EUR (11 USD). We also upgraded to a menu with french fries and a soft drink for an additional 4 EUR (4.5 USD).

Our burgers were quite flat, with a bun that had been thoroughly heated on both the inside and outside. At least this meant that it held together very well, and it actually tasted really good. But somehow it was also quite doughy, and the contrast between a well-toasted exterior and a chewy interior was a little strange. The double beef patties had a nice crust and were juicy, albeit slightly over-salted. We liked that they had chopped the pickles in our Smash Burger, as we got a generous amount of crispy and flavourful pickles in every bite. The lettuce in the House Burger was also very fresh, but it was otherwise a little lacking in ingredients, and we would have preferred a combination of both burgers’ ingredients. The french fries was very good and cooked just right, making them tasty and crispy. The aioli was also very good, as is usually the case in Portugal.

Sinner Smash serve decent burgers, but we would have liked the flavours to pop a little more. This was just a bit sinful, to be honest.

Bar Luca is a cool and loud bar just a stone’s throw from the Opera House in central Sydney. They have been going viral for a while with one of their campaign burgers, which now has a permanent place on their menu. So when we were there, it was the obvious choice. The burger was called Blame Canada and consisted of a single beef patty, American cheese, maple syrup-glazed bacon, maple syrup aioli, poutine and fries inside the burger. The price was 20 AUD (14 USD).

Our burger still looked pretty good when it arrived, shiny from the maple syrup and with a patty with a decent crust. The beef tasted fine, even if it was a bit burnt in some places and would have benefited from a looser texture. The crown of the bun was a bit squashed, but it still held together surprisingly well and tasted great. The bacon was also unexpectedly crispy, and we liked the nice and flavourful maple syrup glaze. But it was very sweet overall with all the maple syrup, which literally dripped from the burger. This made the whole burger really sticky and quite difficult to handle – even if it also meant that we ate the whole thing at once. The fries that were under the patty itself were very soft and completely lacked crunch, probably because they were steamed by being placed directly in the burger. And we would have really preferred a bit larger cheese curds in the poutine, as the texture was a bit unappealing.

Blame Canada sounded very interesting on paper, and we can see why the burger has gone viral and become so popular. And even if everything was alright, it had too many technical mistakes to become a real favourite. But if you are in the mood for a sweet and sticky burger while listening to some loud music, Bar Luca is there for you.

Royal Stacks is a Melbourne-based burger chain that was founded in 2016 after their founder Dani travelled to the US and got a healthy dose of inspiration. They are still expanding, and currently have more than 10 restaurants that are decorated with plenty of well-known pop culture references. The five beef burgers on the menu are clearly inspired by Shake Shack, but with a slightly cooler attitude. We ordered a Bacon Bacon; a double burger with cheese, caramelised onions, double bacon, pickles, ketchup and mustard for 23 AUD (16.5 USD).

Our burger looked good, but we were a bit worried about the large amount of ketchup that was piled on top of the bacon. Fortunately, we were pleasantly surprised by how well the ketchup tied the flavours together, and the sweetness and intense tomato flavour really made their mark here. The beef patties were tender, tasty and well-seasoned, but the bun was a bit too soft and should have been toasted a lot more. Fortunately, it held everything together well, so it wasn’t a big problem. On the ingredients front, the cheese provided a welcome creaminess, and we also liked the strong dill flavour of the pickles – although we would have preferred them to be thicker sliced and to have had more of them. They were already gone halfway through the burger. The bacon was a bit too soft and would have benefited from being crisper, but despite the slightly pale appearance, it was cooked pretty well. The caramelised onions were also a bit too soft, and we would have preferred raw onions here for a more interesting texture. Overall, the burger had well-balanced proportions, although everything was a bit softer than we would have liked.

Royal Stacks is a nice Australian fast casual chain that serves well made and affordable burgers in a cool environment. They are definitely worth checking out the next time you’re in Melbourne.
