Thyme öppnade 2022 och har numera tre restauranger i Belgrad, varav två är inriktade på streetfood och den tredje har ett mer traditionellt restaurangupplägg. Fokus här är smashade burgare, och de hade både en snygg estetik och ett gott rykte om sig. Vi testade deras streetfood-variant på Belgrade Burger Festival 2025, där de hade en handfull olika burgare på menyn. Vi valde Double Smash Burger Classic med två smashade köttpuckar, cheddar, rödlök, sallad, pickles och burgardressing för 990 RSD (95 kronor).

Burgaren serverades i ett papptråg likt de man får en takeaway-sallad i, men när vi lyfte upp det kunde vi se att brödet var superfluffigt. Det var saftigt och smakade jättegott,och hade dessutom stekts på rejält på insidan vilket gjorde att den höll ihop väl under hela måltiden. De två ganska små köttpuckarna var visserligen ganska tunt smashade, men de var ganska ljusa i färgen och saknade en rejäl crust. Och en bättre stekyta hade verkligen fått smakerna att lyfta. Annars uppskattade vi mycket annat med burgaren. Osten var välsmält och smakade gott, och vi gillade verkligen crunchet och den påtagliga syrligheten från picklesen. Både salladen och rödlöken tillförde en hel del krispighet, och burgardressingen gjorde sitt.

När man gör en ganska klassisk burgare så gäller det att alla smaker verkligen sitter och är tydliga, och även om Thyme lagade en god burgare så var det inget som verkligen lyfte. Men med det sagt så gör de ändå en hel del rätt, och vi ser fram emot att besöka några av deras restauranger i framtiden för att se om de presterar bättre i sina egna kök.

Thyme opened in 2022 and now have three restaurants in Belgrade, two of which focus on street food and the third with a more traditional restaurant setup. The focus here is on smashed burgers, and they exhibit both a stylish aesthetic and have a good reputation in the city. We tried their street food version at the Belgrade Burger Festival in 2025, where they offered a handful of different burgers on their menu. We chose the Double Smash Burger Classic with two smashed beef patties, cheddar, red onion, lettuce, pickles and burger sauce for 990 RSD (10 USD).

The burger came in a paper bowl similar to those used for takeaway salads, but when we lifted it up, we could see that the bun was super fluffy. It was juicy and tasted great, and had also been toasted well on the inside, which meant that it held together well throughout the meal. The two fairly small beef patties were quite thinly smashed, but they were quite light in colour and lacked a proper crust. This was a pity as it really would have elevated the burger. Apart from that, we appreciated a lot of other things about the burger. The cheese was well melted and tasted nice, and we really liked the crunch and the pronounced acidity from the pickles. Both the lettuce and red onion added a lot of crunch, and the burger sauce did its job.

When you make a fairly classic burger, it’s important that all the flavours really come through and are distinct, and although Thyme served a nice burger, there was nothing that really elevated everything. They still do a lot of things right, so we look forward to visiting some of their restaurants in the future to see if they perform better in their own kitchens.

The Blique by Nobis hotel is located at Torsplan near S:t Eriksplan in Stockholm, and houses the three restaurants Arc Rooftop, Origo and Boketto. When we tested the burger at Boketto at the end of 2022, we got a burger that didn’t quite live up to our expectations, but after several reports that the burgers had improved, we went back for a second visit. The menu had one burger; the Blique Cheeseburger with a 130-gram beef patty, double burger cheese, chopped white onions, pickles, mustard and mayo. It cost 245 SEK (26 USD) including a generous portion of fries.

The burger was served in a lage brioche bun and contained a pretty thick patty with a nice crust and was a bit pink in the middle. It was well-seasoned and really tasty, but the meat flavors would have really benefited from a slightly larger patty. The well-melted cheese added both creaminess and flavor. The bun was nicely toasted on the inside and was sturdy, but it would have handled the mayo in the heel and the mustard in the crown even better if it had been toasted more. We really liked that they had compensated for the crunchy pickles’ sweetness by skipping ketchup in favor of just American yellow mustard, and the the flavor profile was really well-balanced with a lot of acidity. The white  onions also added flavor, and the only thing we missed here was that it should have been chopped a bit thicker for texture. The fries were very filling, but would have benefited from being fried a bit more so that they were more golden yellow. We liked that they came with both ketchup and a slightly mustardy mayo as well.

The Blique by Nobis burger was much better this time. If you’re staying at the hotel, the burger is an easy choice to have in their nice restaurant, but they are also worth checking out for non-guests in the Torsplan area.
