Snarare knaprigt än krispigt

Det var med höga förväntningar vi klev in på The Region i Chicago, mycket på grund av att de har fått rykte om sig att vara ett av stadens bästa burgarställen. Menyn består av fem köttburgare, en patty melt och flertalet korvar, och vi hittade inga vegetariska burgaralternativ. Vi beställde en Single Cheeseburger för 11 dollar (110 kronor), som bestod av en köttpuck på 200 gram, ost, lök, relish och dressing.

Vi visste redan innan besöket att de smetar ut kanterna på köttet för maximalt med lacy edges, som skapar supertunn och krispig stekyta längst ut. Men den aggressiva smashtekniken de använde ledde till att proportionerna blev ganska problematiska. Annars såg själva burgaren helt okej ut. Tyvärr så var inte våra första tuggor jättebra. Ytterkanterna på köttet var så hårt smashade att köttet nästan grusades sönder mellan tänderna, och våra första tuggor bestod bara av hårdsmashat kött. Längre in blev det saftigare, och då hittade vi en en angenäm och tydlig köttsmak som var betydligt lättare att tycka om. Här var det välbalanserat, med precis lagom kryddning och en mycket trevligare textur. Brödet var fint fluffigt med ett trevligt motstånd, och vi gillade den lätta smörsmaken. Den smakrika osten hade en härligt krämig textur, och vi uppskattade även deras smakrika och syrliga relish, som vi gärna hade sett mer av på burgaren. Tyvärr så hölls burgaren tillbaka av den obalanserat söta thousand island-dressingen.

Det är en sak att The Regions använder sig av en specifik smashstil, men de misslyckades tyvärr med att hitta den där svåruppnådda balansen med ett alldeles kött som var knaprigt snarare än krispigt. Trots den mycket trevliga servicen och sköna lokalen så finns det många andra ställen i Chicago vi rekommenderar istället.

We entered The Region in Chicago with high expectations, largely because of its reputation as one of the city’s best burger joints. Their menu consists of five beef burgers, a patty melt and several sausages, and we couldn’t find any vegetarian burger options. We ordered a Single Cheeseburger for 11 USD, which consisted of a 200 gram beef patty, cheese, onions, relish and dressing.

We knew before our visit that they smear the edges of the patty for maximum lacy edges, to create a super thin and crispy crust on the outside. But the aggressive smashing technique they used led to som problematic ratios. Apart from that, the burger itself looked decent. Unfortunately, our first bites weren’t the best. The outer edges of the patty were so heavily smashed that the meat was crumbled between our teeth, and our first few bites just consisted of crunchy crust. As we got further in, it grew juicier, revealing a pleasant and distinct beefiness. Here it was well-balanced, with just the right amount of seasoning and a much more pleasant texture. The bun was nice and fluffy with a pleasant texture, and we liked the light buttery flavour. The rich cheese had a lovely creamy texture, and we also appreciated their savoury and tangy relish, which we would have liked to see more of on our burger. Unfortunately, our meal was held back by the unbalanced sweetness of the thousand island dressing.

It’s one thing for The Regions to use a specific smash style, but they sadly failed to find that difficult balance, and the patty’s edges ended up crunchy rather than crispy. Their overly sweet dressing held them back as well, and despite the very friendly service and cosy location we recommend other burger restaurants in Chicago instead.

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
