Big Island Burger slog upp dörrarna till sin första enhet i mitten av november 2024 i Waikiki. Det är deras första etablering på Oahu, och de har lagt stort fokus på lokala råvaror. Köttet kommer från huvudön Hawaii och de flesta övriga ingredienser är också lokalt odlade – något vi verkligen uppskattar. Grundaren till restaurangen är dessutom delägare i Ultimate Burger i Kona, som har utsetts till Hawaiis bästa burgare sex gånger. På menyn fanns en standardburgare som gick att få med en eller flera köttpuckar. Vi valde en The Double, som förutom dubbla köttpuckar och ost innehöll sallad, tomat, lök, pickles och BIB-sås för 21 USD (200 kronor). När vi beställde fick vi frågan om stekgrad och valde medium rare efter kockens rekommendation. Vi fick också välja mellan fyra olika ostar och valde cheddar.

Burgaren kom invirad i papper och kändes direkt tung i handen. Köttet var saftigt med en tydlig rosa kärna, och hade en härligt grillad smak – trots att den nästan helt saknade crust. Som tur var bidrog löken och picklesen med en hel del trevlig textur. Vi upplevde dock att dubbelburgaren blev för köttig, och ratiomässigt hade det passat bra med en enkelburgare. Men med tanke på att de propsade på upp till fyra köttpuckar så var det svårt att veta det i förväg. Nu blev briochebrödet väldigt svampigt på grund av den stora mängden kött och att de virat in burgaren i papper. Överlag blev det en ganska blöt burgarupplevelse, detta trots att dressingen serverades vid sidan av. Den var i alla fall riktigt god och skar igenom de feta elementen med sin tydlig syra, och vi hade gärna sett den inuti burgaren.

Vi gillar att Big Island Burger fokuserar på lokala råvaror, och hoppas bara att de tänker lite mer på ration mellan ingredienserna i framtiden.

Big Island Burger opened its first location in mid-November 2024 in Waikiki. This is their first establishment on Oahu, and they focus heavily on local ingredients. The patties come from the Big Island of Hawaii, and most of the other ingredients are also locally sourced – something we really appreciate. The restaurant’s founder is also a co-owner of Ultimate Burger in Kona, which has been named Hawaii’s best burger six times. Their menu offered a standard burger that could be ordered with up to four beef patties. We chose The Double, which, in addition to double beef patties and cheese, contained lettuce, tomato, onion, pickles and BIB sauce for 21 USD (200 SEK). While ordering, we were asked how we wanted our meat cooked and chose medium rare on the chef’s recommendation. We also had a choice of four different cheeses and chose cheddar.

The burger came wrapped in paper and immediately felt heavy when we picked it up. The patty was juicy with a distinct pink centre and had a delicious grilled flavour – even though it had almost no crust. Fortunately, the onion and pickles added a nice texture. However, we found that the double burger was too meaty, and in terms of ratio, a single burger would have been more appropriate. But considering that they were offering up to four beef patties, it was difficult to know this in advance. The brioche bun became very soggy due to the large amount of meat and the fact that they had wrapped the burger in paper. Overall, it was a rather messy burger experience, despite the dressing being served on the side. At least it was really nice and cut through the fatty elements with its distinct acidity, and we would have liked to see it inside the burger.

We like that Big Island Burger focuses on local ingredients, and just hope that they take a little more care with the ratio of ingredients in the future.

She Burger is a restaurant chain with several locations in Dubai and around the Middle East, and they participated in the Dubai Burger Championship 2026. The burger they served at the festival was the same name as the restaurant, She Burger, and it consisted of two smashed beef patties, roasted onions, veal bacon jam with a lot of coffee, and their signature sauce for 60 AED (16.5 USD).

We immediately felt that the burger had a very international appearance when we saw it, and it offered a well-shaped brioche bun, plenty of toppings, double meat patties. The bun was soft and had a good size, but the heel would have been able to handle the beef juices better if they’d let the patties rest before assembly. The Black Angus meat had a strong meat flavour with a robust seasoning, but we felt that the crust should have been more pronounced and that the meat could have been even juicier. The fried onion was texturally brilliant, and it added both flavour and a lovely crunch that the burger really needed. The veal bacon jam was incredibly good and had a much more mature taste than we are normally used to. It was very coffee heavy, which we really appreciated. On the other hand, the signature sauce was completely anonymous and didn’t make any real impression.

She Burger do a lot right with this burger, but they need to refine the details and the meat to really make it a winner. But that being said, they offer one of the better burgers in Dubai.
