Hills är en burgarrestaurang som grundades 2017, och som ligger i Brecon i Wales. Sedan dess har de fått rykte om sig att vara Wales ledande burgarställe, och de har varit finalister i den engelska burgartävlingen National Burger Awards flera gånger. Vi hade turen att stöta på deras foodtruck Hills Airstream under Burger Fest UK i London, där vi beställde deras Cheeseburger med dubbla köttpuckar gjorda på kött från Wales, ost, pickles och burgardressing för 13 GBP (165 kronor).

Vi blev lite skeptiska när vi såg brödet, då det var täckt med frön och påminde mer om en rustik frukostfralla än ett klassiskt burgarbröd. Men vi högg glatt in i burgaren ändå, och möttes av ett otroligt mört och smakrikt kött. Den något tjockare köttpucken serverades dessutom med en lätt rosa kärna, vilket vi verkligen uppskattade. Köttet var utan tvekan stjärnan i föreställningen, för helhetsupplevelsen drogs ned något av brödet. Själva innanmätet var mjukt och trevligt, men den lite sega brödskorpan gjorde det onödigt svårätet. Både dressingen och picklesen bjöd i alla fall på en tydlig syra som gjorde burgaren förvånansvärt fräsch, men samtidigt hade vi gärna sett lite mer sälta eller sötma överlag för att skapa mer balans och få smakerna att lyfta mer. Utöver brödet så var texturerna överlag ganska mjuka, men det var inget som störde oss nämnvärt när köttet höll så pass hög nivå.

Hills serverar burgare med fantastiskt kött som hålls tillbaka något av brödet och de andra ingredienserna. Men vi är väldigt nyfikna på resten av deras kreativa meny, och ser fram emot att testa dem på hemmaplan i framtiden.

Hills is a burger restaurant that was founded back in 2017 in Brecon, Wales. Since them they’ve made a name for themselves ad Wales’ leading burger place, and they have been finalists at the National Burger Awards several times. We were lucky enough to come across their Hills Airstream food truck at Burger Fest UK in London, where we ordered their Cheeseburger with double patties made from Welsh beef, cheese, pickles and burger sauce for 13 GBP (17.5 USD).

We were a little sceptical when we saw the bun, as it was covered in seeds and looked more like a rustic breakfast roll than a classic burger bun. But we happily took a bite of the burger anyway, and were met with incredibly tender and flavourful meat. The slightly thicker patty was also served with a light pink centre, which we really appreciated. The meat was undoubtedly the star of the show, as the overall experience was slightly let down by the bun. The insides were soft and pleasant, but the slightly tough crust made it unnecessarily difficult to eat. The sauce and pickles did at least provide a clear acidity that made the burger surprisingly fresh, but we would have liked to have seen a little more variety – perhaps more salt or sweetness – to create more balance and make the flavours pop more. Apart from the bun, the textures were generally quite soft, but that didn’t bother us too much when the meat was of such a high standard.

Hills serve burgers with fantastic meat that is slightly held back by the bun and other ingredients. But we are very curious about the rest of their creative menu, and we look forward to trying them at their restaurant in Wales in the future.

🏴󠁧󠁢󠁥󠁮󠁧󠁿 @black_bear_burger ★★★★☆

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
