The Barn opened back in 2013 on Kyrkogatan in central Gothenburg and is one of the veterans of the Swedish burger scene. The restaurant itself is quite striking, designed to look like a 100-year-old barn, so it’s perhaps not that surprising that they’re keen on sticking to their traditions. Not much has happened with the menu either, and a lot has remained the same during our many revisits since we first came here in 2014. When it comes to burgers, they only have three beef options, and the only one with cheese uses an 18-month-aged Prästost that we’ve tried before. So this time we ordered a Pigan with onions, tomato, lettuce, pickles and chive mayo for 189 SEK (20 USD). We skipped the fries this time, as a portion cost 64 SEK (7 USD).
The burger looked rather peculiar when it arrived. It was comically tall, with a thick but narrow beef patty, sloppily assembled vegetables and a pointy bun pierced with a skewer. The coarsely ground patty had a good beef flavour, but it was too cautiously seasoned and lacked the juiciness we expect from a bistro burger. The bun had been toasted far too hard and was dry and crumbly on the inside, while the proportions between the bun and patty made the burger difficult to eat and hold together. Instead, it was the toppings that provided much of the flavour. The diagonally sliced pickle was very salty, the tomato had a pleasant sweet and tangy flavour and the chive mayo was really good.
The Barn has been around for a long time, but a lot has happened since the first wave of craft burgers reached Sweden. Our recent visits haven’t come close to the restaurant’s previous level, and this time we were served an expensive and uninspiring burger that lacked relevancy. We hope The Barn dare to evolve in the future, just as they did when they first opened.

🇸🇪 Mother of Wagon ★★★★☆
Mother of Wagon opened by Arboga’s train station in the summer of 2026, and is actually run by the mother of the owner of The Wagon Burgers & Brews in Stockholm. Besides the clever name, they also offered four burgers, all of which could be made vegetarian. We ordered a Cheeseburger with two 100-gram mustard-smashed beef patties, cheddar, onions, pickles, ketchup and dressing in a brioche bun. It cost 130 SEK (14 USD), and we also added fries for 30 SEK (3 USD).
The burger looked really good when it arrived, even if it had been assembled somewhat hastily with a lot of sauce. The flavours worked well, but all that sauce made it a little difficult to eat as the patties kept sliding around. The beef from a local farm in Örebro was generously seasoned and had plenty of flavour. However, it had been slightly overworked and was a bit too compact, and we would’ve preferred a more airy texture. The cheese had melted nicely over the patties, and we also appreciated that the fluffy bun had been nicely toasted on the inside, helping it hold together throughout the meal. We liked the finely chopped onions, while the pickles were crunchy, if slightly sweet. Although the mustard smash added plenty of flavour to the beef, we would’ve appreciated the acidity of American yellow mustard instead of the fairly sweet burger sauce. The fries came in a very generous portion and were thick and well-cooked, but slightly too heavily salted.
Mother of Wagon has managed to build a really solid foundation in just a few months, and the friendly staff also contributed to the experience. We’re really happy that it’s now possible to get a good burger in central Arboga.

Tulip Shop Tavern opened in Portland in 2019 as a cosy neighbourhood bar serving drinks and food under the same roof. Inside, there was dim lighting and good music, but we grabbed a table on the patio and ordered a couple of slushie drinks while looking through the menu. Alongside a few other dishes, there were two beef burgers, so we ordered one of each. The Tavern Burger came with two 113-gram beef patties, cheese, shredded lettuce, pickles and special sauce for 15 USD, while the Fair Burger had two 113-gram beef patties, white American cheese, caramelised onions, shredded lettuce, pickles and garlic mayo for 16 USD. We also ordered fries for 5 USD, which included a dip of our choice.
The burgers looked really good when they arrived. The beef was juicy and flavourful, while the nicely melted cheese added plenty of creaminess. The pickles were distinctly acidic and crunchy, giving the burgers some much-needed flavour and textural contrast. However, the lettuce was shredded so finely that it had almost completely lost its crunch, and the heat from the beef had softened it even further. The Tavern Burger tasted like a more luxurious Big Mac, which we really enjoyed, while the caramelised onions gave the Fair Burger more umami and sweetness. It was also seriously saucy and packed with flavour. Our only real complaint was that both burgers were a little too soft. The fries were really crispy and tasty, and the Buck dip had a nice kick that helped us finish everything.
Tulip Shop Tavern is a cosy little bar that serves really good burgers. Everything was really tasty, and both the burgers and fries come recommended. And whatever you do, don’t miss the slushie drinks!

Fallow in London, run by chefs Jack Croft and William Murray, opened in 2021 and has become a huge success. As well as receiving plenty of praise for their food, they have built a massive following by sharing tips, techniques and recipes on social media. During our visit, the restaurant was packed with hungry diners, and we ordered their Dairy Cow Burger with cheese, onions, pickles, lettuce and sauce for 19 GBP (25.5 USD).
Our burger was served rather grandly on a porcelain plate, but had been hastily assembled, probably due to the frantic pace in the kitchen. The bun was slightly firm, and heel struggled from the start to stay intact. The beef had a pleasant, lightly dry-aged flavour that we enjoyed, while the juicy, airy texture in the centre was very nice. However, the beef was a bit chewier around the edges, which was a shame. The dill pickles added freshness with their lovely acidity, but a bay leaf had made its way into the burger, which was distracting and felt unnecessarily sloppy. The onions also had their problems and should either have been cooked more or have more crunch. As they were, they ended up somewhere in between and did not add much to the burger. The fries, which we added for 7 GBP (9.5 USD), were much better; crispy with a a tasty and spicy seasoning.
Fallow just about manage to get a passing score, and we have to admit that we expected more from them. There was nothing wrong with the quality of the ingredients, but it was disappointing to encounter unnecessary sloppiness with both the food and service during our visit.
