Heard Burger i London gjorde mycket väsen av sig när de öppnade 2025, främst på grund av inblandningen av Jordan Bailey vars förra restaurang Aimsir hade två stjärnor i Guide Michelin. De har en restaurang i Borough och en i Soho, och vi besökte den sistnämnda som var enkelt inredd med ett stort öppet kök. Menyn bestod av tiotalet burgare, och vi beställde tjockpucksburgaren The Soho för 15 GBP (190 kronor) med bland annat Gruyèreost, shoestring fries, vattenkrasse och en cornichon- och dragonmajonnäs, samt de två smashburgarna The Heard för 13,5 GBP (170 kronor) och The Not So Boring Burger, som kom toppad med en sked kaviar och kostade 23 GBP (295 kronor).

Heard var klart den bästa av de tre. Köttet var saftigt under den krispiga crusten, och framför allt bidrog jalapeño hot honeyn med både sötma och en tydlig hetta samtidigt som de väldigt tjocka picklesen tillförde gott om syra och tuggmotstånd. The Not So Boring Burger levde inte upp till sitt namn, och den lilla mängden kaviar på toppen lyfte inte smaken och gjorde den onödigt gimmick-artad. The Soho hade en tjock köttpuck som smakade gott, men vi hade önskat oss en mer hängmörad köttsmak. Smakerna var lite spretiga, men de bands samman snyggt när vi doppade burgaren i den medföljande rosépepparsåsen. Det glänsande brödet var mjukt och gott på samtliga burgare, men insidan av kronan var för hårt stekt och gav alla burgarna en lätt bränd ton. Tillbehören imponerade desto mer. De tjocka pommes fritesen för 5 GBP (65 kronor) var välfriterade, salta och smakrika, och milkshaken med banan och mandelsmör för 7,5 GBP (95 kronor) var riktigt god och påminde om banoffee pie.

Heard Burgers kreativa burgare är helt klart godkända, men de borde vara mer omsorgsfullt tillagade med tanke på hajpen och det höga priset, särskilt med tanke på den knivskarpa konkurrensen i Englands huvudstad.

Heard Burger in London made quite a splash when they opened in 2025, largely due to the involvement of Jordan Bailey, whose previous restaurant Aimsir held two Michelin stars. They have one restaurant in Borough and another in Soho, and we visited the latter, which had a simple interior with a large open kitchen. The menu featured around ten burgers, and we ordered the thick-patty The Soho for 15 GBP (20 USD), with Gruyère, shoestring fries, watercress and a cornichon and tarragon mayo, as well as the two smashed burgers The Heard for 13.5 GBP (18 USD) and The Not So Boring Burger, which came topped with a spoonful of caviar and cost 23 GBP (31 USD).

The Heard was clearly the best of the three. The beef was juicy underneath the crispy crust, and above all, the jalapeño hot honey added both sweetness and a distinct heat, while the curiously thick pickles provided plenty of acidity and texture. The Not So Boring Burger failed to live up to its name, and the small amount of caviar on top did little for the flavour and made it feel unnecessarily gimmicky. The Soho had a thick beef patty that was tasty, but we would have liked a deeper dry-aged flavour. The flavours were a little disjointed, but came together nicely when we dipped the burger into the accompanying pink peppercorn sauce. The glossy buns were soft and tasty on all three burgers, but the inside of the crown had been toasted too hard, giving every burger a slightly burnt note. The sides were much more impressive. The thick fries for 5 GBP (6.5 USD) were well-cooked, salty and full of flavour, while the banana and almond butter milkshake for 7.5 GBP (10 USD) was delicious and tasted like a banoffee pie.

Heard Burger’s creative burgers are decent, but we had expected more attention to detail considering their hype and high prices, especially considering London’s fierce burger competition.

🇸🇪 Mother of Wagon ★★★★☆

Mother of Wagon opened by Arboga’s train station in the summer of 2026, and is actually run by the mother of the owner of The Wagon Burgers & Brews in Stockholm. Besides the clever name, they also offered four burgers, all of which could be made vegetarian. We ordered a Cheeseburger with two 100-gram mustard-smashed beef patties, cheddar, onions, pickles, ketchup and dressing in a brioche bun. It cost 130 SEK (14 USD), and we also added fries for 30 SEK (3 USD).

The burger looked really good when it arrived, even if it had been assembled somewhat hastily with a lot of sauce. The flavours worked well, but all that sauce made it a little difficult to eat as the patties kept sliding around. The beef from a local farm in Örebro was generously seasoned and had plenty of flavour. However, it had been slightly overworked and was a bit too compact, and we would’ve preferred a more airy texture. The cheese had melted nicely over the patties, and we also appreciated that the fluffy bun had been nicely toasted on the inside, helping it hold together throughout the meal. We liked the finely chopped onions, while the pickles were crunchy, if slightly sweet. Although the mustard smash added plenty of flavour to the beef, we would’ve appreciated the acidity of American yellow mustard instead of the fairly sweet burger sauce. The fries came in a very generous portion and were thick and well-cooked, but slightly too heavily salted.

Mother of Wagon has managed to build a really solid foundation in just a few months, and the friendly staff also contributed to the experience. We’re really happy that it’s now possible to get a good burger in central Arboga.
