Foodtrucken MeatCastles började sin resa redan 2021, när matbloggaren Tom Warwick började smasha burgare på matfestivaler. Vi besökte dem på Fume BBQ Festival 2025 i Manchester, där de serverade sin M.O.A.B.-burgare med två 120-gramsköttpuckar, dubbel ost, baconsylt och ett val mellan deras Emmy-sås eller dillsås för 15 GBP (195 kronor). Samt en enkel Cheeseburger med 100 gram kött och ost för 12 GBP (155 kronor).

Våra massiva burgare serverades i snygga pappkartonger och var extremt inbjudande med sin gyllenbruna stekyta och överdådiga toppings. Det gyllengräddade brödet höll ihop allting snyggt och agerade som lagspelare utan att ta för mycket plats. Det hindrade dock inte massor av sås och baconsylt från att välla ut när vi började äta. Köttet hade hängmörats i över 40 dagar och var smashat enligt den så kallade vulkantekniken som gjorde det krispigt utmed kanterna och saftigt i mitten. Det hade en djup och härlig köttsmak med fantastiska hängmörade toner. Det tog några inledningsvis frasiga tuggor innan vi fick hela smakbilden, men den otroligt höga kvaliteten gjorde detta till en petitess. Vi gillade burgaren med Emmy-såsen mest, eftersom hettan från gochujangsåsen lirade galant med de andra smakerna. Dillsåsen var också frisk och smakrik, och bidrog med gott om syrlighet som skapade en fantastisk helhet. Den otroligt dekadenta baconsylten med bourbon var en av de bästa vi har ätit, och lyfte verkligen burgarna till en helt ny nivå med sin murriga sötma. Cheeseburgaren var kanske lite för enkel för sitt eget bästa, och vi hade gärna sett lite fler klassiska cheeseburgaringredienser. Den fungerade i alla fall som ett bevis på att MeatCastles är som bäst när de tar i från tårna.

MeatCastles lever upp till den massiva hajpen med burgare i världsklass. Håll koll på deras schema, för om du kan pricka in ett besök på deras foodtruck i Midlands-distriktet så är det i princip obligatoriskt.

MeatCastles began their journey back in 2021, when food blogger Tom Warwick started smashing burgers at food festivals. We visited their food truck at the Fume BBQ Festival 2025 in Manchester, where they served their M.O.A.B. burger with two 120-gram beef patties, double cheese, bacon jam and a choice of their Emmy sauce or dill sauce for 15 GBP (20 USD). They also offer a simple cheeseburger with a 100-gram patty and cheese for 12 GBP (16 USD).

Our massive burgers came in stylish cardboard boxes and looked extremely inviting with their golden brown crust and lavish toppings. The golden-brown bun held everything together nicely and acted as a team player without taking up too much space. However, that didn’t stop lots of sauce and bacon jam from spilling out when we started eating. The beef had been dry aged for over 40 days and smashed using what we call the volcano technique, giving it crispy edges and a juicy centre. It had a deep and delicious beef flavour with fantastic dry aged notes. It took a few initially crispy bites before we got all the flavours, but the incredibly high quality made this a minor point. We liked the burger with the Emmy sauce the most, as the heat from the gochujang sauce played nicely with the other flavours. The dill sauce was also fresh and flavourful, adding plenty of acidity that created a fantastic whole. The incredibly decadent bourbon bacon jam was one of the best we’ve ever had, and really elevated our burgers to a whole new level with its smoky sweetness. The cheeseburger was perhaps a little too simple for its own good, and we would have liked to see a few more classic cheeseburger ingredients. In any case, it served as proof that MeatCastles are at their best when they go all out.

MeatCastles live up to their massive hype with world-class burgers. Keep an eye on their schedule, because if you can time a visit to their food truck in Central England, it’s almost mandatory.

She Burger is a restaurant chain with several locations in Dubai and around the Middle East, and they participated in the Dubai Burger Championship 2026. The burger they served at the festival was the same name as the restaurant, She Burger, and it consisted of two smashed beef patties, roasted onions, veal bacon jam with a lot of coffee, and their signature sauce for 60 AED (16.5 USD).

We immediately felt that the burger had a very international appearance when we saw it, and it offered a well-shaped brioche bun, plenty of toppings, double meat patties. The bun was soft and had a good size, but the heel would have been able to handle the beef juices better if they’d let the patties rest before assembly. The Black Angus meat had a strong meat flavour with a robust seasoning, but we felt that the crust should have been more pronounced and that the meat could have been even juicier. The fried onion was texturally brilliant, and it added both flavour and a lovely crunch that the burger really needed. The veal bacon jam was incredibly good and had a much more mature taste than we are normally used to. It was very coffee heavy, which we really appreciated. On the other hand, the signature sauce was completely anonymous and didn’t make any real impression.

She Burger do a lot right with this burger, but they need to refine the details and the meat to really make it a winner. But that being said, they offer one of the better burgers in Dubai.

Thellas is a food truck in Gävle that we’ve heard a lot of positive things about since they opened in 2024. The menu at the time of our visit consisted of four beef burgers and a vegetarian option. We chose the classic ”Thellas Cheese” cheeseburger with double burger cheese, silver onions, dill pickles, ketchup, mustard and mayonnaise. A single patty burger cost 115 SEK (12.5 USD), but we ordered a double 120-gram patty burger with for 145 SEK (15.5 USD) and also added 30 SEK (3 USD) for french fries and 15 SEK (1.5 USD) for a chili mayo.

There was a long line of people waiting for their food, and when the burger was served we were greeted by a well-composed and inviting cheeseburger. The first bite was incredibly flavourful and juicy, with a very clear crust on the patties. The beef was well-seasoned with a generous amount of coarsely ground black pepper. And the creamy cheese was delicious and nicely melted over the beef. Unfortunately, the bun was a bit of a disappointment, because despite looking good, it had been toasted for too long on the grill and lacked the fluffy texture we expect from a brioche bun. Their own-pickled cucumber was delicious and added both acidity and crunch, and we would have liked to see more of it so that it was spread over the entire burger. All the sauces did their job without standing out and were also in the right amount, without any one of them overpowering the others. We also liked the generous portion of crispy french fries, and the smoky chilli mayo was tasty – although it could have been a bit spicier.

Thellas undoubtedly serve one of the better burgers we’ve eaten in Gävle, and the service from the guys in the food truck was excellent as well. We definitely recommend keeping an eye on their schedule and visiting them if you’re in the area.
