The Cave har stängt sin verksamhet.

The Cave öppnade under våren 2023 i stadsdelen Kallio i Helsingfors. Restaurangen var stor och luftig, och inredd i mörka färger. Halva menyn bestod av burgare och halva av bao-buns. Det fanns fyra köttburgare att välja bland, och valet föll på en Double Cheeseburger med två smashade köttpuckar, ost, pickles och aioli för 9 euro (105 kronor).

Vår burgare såg lovande ut, med tunt smashat kött i ett mjukt potato bun-bröd. Stekytan var snygg och bjöd på lite krispighet. Köttet var fortfarande rätt saftigt, men det hade behövts mer salt för att få det att lyfta smakmässigt. Som så många andra ställen i Finland så använde The Cave vanlig ost på sina hamburgare, och resultatet blev ganska snabbt ett plastigt osttäcke som mest var i vägen. Brödet var mjukt och varmt, men hade varit godare med mer färg på insidan. Picklesen var till stor hjälp texturmässigt, men den hade gärna fått ha mer syra i smaken. Vi uppskattade smakkompositionen i deras egenlagade aioli, även om den var väldigt vitlökstung – och vi har svårt att förstå varför den fanns på nästan alla deras burgare. När vi beställer en cheeseburgare så har vi vissa förväntningar på hur den ska smaka, och vi var inte beredda på att den främst skulle smaka vitlök.

The Cave serverar välgjorda hamburgare med en egen twist. Hantverket finns där, och de detaljer vi hakade upp oss på är främst smakmässiga. Vi ser fram emot att besöka dem igen i framtiden för att se hur de utvecklas, för det vi sett och smakat hittills är ändå lovande.

The Cave opened in the spring of 2023 in Helsinki’s Kallio district. The restaurant was large and airy, decorated in dark colours. Half the menu consisted of burgers and the other half of bao-buns. There were four beef burgers to choose from, and we ordered the Double Cheeseburger with two smashed beef patties, cheese, pickles and aioli for 9 EUR (9.5 USD).

Our burger looked promising, with thinly smashed meat in a soft potato bun. The crust was nice and offered some crunchiness and it was still quite juicy on the inside, even though it could have done with some more salt. Like so many other places in Finland, The Cave use regular cheese on their burgers, resulting in a plasticky cheese lid that mostly got in the way. The bun was soft and warm, but would have been better with more colour on the inside. The pickles were very helpful in terms of texture, but it would have been nice if they were more acidic. We appreciated the flavour composition of their homemade aioli, although it was very garlic-heavy – and we find it hard to understand why it was on almost all of their burgers. When we order a cheeseburger, we have certain expectations of what it should taste like, and we were not prepared for so much garlic flavour.

The Cave serve well-crafted burgers with their own twist. The craftsmanship is there, and the things we disliked are mainly taste related. We look forward to visiting them again in the future to see how they evolve, because what we’ve seen and tasted so far is still promising.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
