Shoku Burger

Shoku Burger ligger i Vantaa i norra Helsingfors, och serverar burgare med tydliga asiatiska influenser. Vi besökte dem när de stod på burgarfestivalen Burger Lovers Festival 2023, där de erbjöd en begränsad meny till festivalpriser. Vi beställde deras signaturburgare Shoku för 10 EUR (115 kronor), som innehöll finskt nötkött, cheddarost, pickles, rödlök, majonnäs och ketchup i ett sesamtäckt japanskt milk bun.

Det lät ju väldigt lovande, men när burgaren serverades kändes det som att vi rest fem år bakåt i tiden. Den såg riktigt tråkig ut och var väldigt platt och bred. Brödet påminde inte ett dugg om ett fluffigt och sött japanskt milk bun, utan var mer som en oljig och och smulig brioche. Och redan efter första tuggan blev det tydligt att själva hantverkstänket saknades, då köttet var ganska smaklöst och hade en porös konsistens, med en osmält och vaxig cheddarskiva ovanpå. Vi uppskattade de asiatiska smakerna från deras vinägriga pickles, och det fanns en ton av hetta, syrlighet och sötma som fungerade bra i bakgrunden. Smakmässigt var det inte katastrofalt, och vi hade gärna ätit detta som en grym fusionmacka, men som hantverksburgare betraktat kan vi inte blunda för alla de stora missarna som gjordes.

Vi gillar fusionburgare när de görs på rätt sätt, men det måste göras med fingertoppskänsla och med en tydlig vision. Och tyvärr ansåg vi att Shoku Burger saknade dessa beståndsdelar.

Located in Vantaa in northern Helsinki, Shoku Burger serve burgers with clear Asian influences. We visited them at the Burger Lovers Festival 2023, where they were offering a limited menu at festival prices. We ordered their signature Shoku burger for 10 EUR (11 USD), which contained Finnish beef, cheddar, pickles, red onion, mayonnaise and ketchup in a sesame-covered Japanese milk bun.

It sounded very promising, but when our burger arrived it felt like we had travelled five years back in time. The burger looked dull and was very flat and wide. The bun was not at all reminiscent of a fluffy and sweet Japanese milk bun, but more like an oily and crumbly brioche. And our first bite revealed that the craftsmanship was missing, as the meat was tasteless and had a porous texture, with an unmelted slice of waxy cheddar on top. We appreciated the Asian flavours from their vinegary pickles, and there were notes of spiciness, acidity and sweetness in the background that were pleasant. Taste-wise this wasn’t disastrous, and we would have happily eaten this as an awesome fusion sandwich. But as a craft burger, we can’t turn a blind eye to all the glaring mistakes.

We like fusion burgers when they’re done right, but it has to be done carefully and with a clear vision in mind. Unfortunately, we felt that Shoku Burger lacked these elements.

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.

During this amazing event, we reviewed all 16 competing beef burgers. After a full day of judging, one burger stood above the rest and was awarded the coveted ”Burgerdudes Best Burger belt”.
