John Viande ligger i 10:e arrondissementet i Paris och ser ut som en klassisk pub. Under vårt besök var lokalen full av glada och törstiga besökare, men som namnet antyder (viande betyder kött på franska) så är maten deras egentliga fokus och passion. Menyn rymde en handfull olika bistroburgare samt två smashburgare, och vi beställde deras Double Cheeseburger med två smashade köttpuckar, cheddar, salladslök, pickles, senap och ketchup för 14 EUR (155 kronor). I priset ingick dessutom pommes frites samt tre olika dippsåser.

Burgaren och dess tillbehör såg riktigt lovande ut när de serverades. Det fluffiga briochebrödet hade en tydlig och frasig stekyta på insidan, och en lika tydlig doft av pannkakor från äggen och smöret i brödet. Köttet, som de mal själva i restaurangen, hade en tydlig stekyta, men tyvärr utan samma frasiga och krispiga yta. Smaken och texturen var i alla fall riktigt bra, och trots att köttet var hårt smashat så var det fortfarande saftigt. Salladslöken fungerade bättre än väntat, men det var nog tack vare att den använts väldigt sparsamt. Men vi hade överlag velat ha lite mer av allt, då smakerna var lite för försiktiga. För trots att köttet var en höjdpunkt så tog brödet över och blev för dominant. Våra pommes frites var utmärkta och svåra att sluta att äta, men även dippsåserna bjöd på för lite smak och såg roligare ut än de faktiskt var.

Vi kände inte till så mycket om John Viande innan vårt besök, men vi blev glatt överraskade av deras burgare. Trots salladslöken så kändes detta ändå som en riktigt klassisk cheeseburgare, och med lite mer ost och lite bättre tryck i smakerna hade det här kunnat bli en av våra nya favoriter i Frankrikes huvudstad.

John Viande can be found in Paris’ 10:t arrondissement, and looks just like a classic pub. During our visit the restaurant was filled with thirsty customers, but as the name implies (viande means meat in French) they actually focus on food. Their menu contained a handful different thicker bistro burgers and two smash burgers, and we ordered their Double Cheeseburger with two smashed beef patties, cheddar, spring onions, pickles, ketchup and mustard for 14 EUR (14 USD). The price also included french fries and three dipping sauces.

Our burger and sides looked really promising, and the fluffy brioche bun was distinctly toasted on the inside, with a clear pancake aroma from the eggs and butter. The beef, which they grind everyday in the restaurant, had a nice crust, even though it wasn’t as crispy as the bun.  The flavours and textures were all there though, and the patties were still juicy on the inside despite being smashed thinly. The spring onions worked better than expected, probably thanks to them being used sparsely, but overall we would have preferred a bit more of everything as the flavours were a bit too restrained. And even though the beef was the star, the bun took over and became a bit dominant. Our french fries were excellently cooked and hard to stop eating, but their dipping sauces didn’t taste of much and were a bit of a letdown.

We didn’t really know much about John Viande before visiting them, but we were pleasantly surprised by their burgers. Despite the spring onions, this felt like a classic cheeseburger, and with a bit more cheese and deeper flavours they could easily become one of our new favourites in the French capital.

🏴󠁧󠁢󠁥󠁮󠁧󠁿 @black_bear_burger ★★★★☆

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
