L’Artisan du Burger är en kedja med flera restauranger i Frankrike och en i Dubai. De har tiotalet restauranger i Paris, där vi besökte dem. Lokalerna är inredda i en lyxigare stil och de serverar enligt egen utsago gourmetburgare med inspiration av det franska köket. Menyn rymde fem olika köttburgare samt en mängd olika smörgåsar, sallader och soppor. Samtliga burgare hade intressant nog olika typer av ost på sig, och vi beställde en Halles med kött, cheddar, tomat, sallad, gräslök och majonnäs för 10 EUR (105 kronor) (10 USD) samt pommes frites för 4 EUR (45 kronor) (4 USD).

Det stod ”300 gram” vid sidan av burgarna på menyn, men det visade sig gälla hela burgaren – inklusive det stora brödet. Själva köttet var som en liten förformad överraskning i mitten av allt. Det enda positiva var att det ändå var någorlunda saftigt och hade bra sälta, men i övrigt var det smaklöst och jämngrått, trots att vi beställt köttet medium rare. Osten var mörk i färgen och plastig i texturen, och våra övriga toppings bidrog inte med mer än lite olika texturer. Gräslök är en populär ingrediens på burgare i Paris, men för oss kändes örten malplacerad. Det stora brödet, med blandade frön på toppen, var mjukare och mer diskret än väntat, och var intressant nog ganska gott. Att våra pommes frites var underfriterade och smaklösa kom inte som någon större överraskning.

L’Artisan du Burger är stora i orden och attityden, men vi upplevde dem som en klassisk turistfälla som inte bryr sig särskilt mycket om vare sig kvalitet eller hantverk.

L’Artisan du Burger is a chain with several restaurants in France and one in Dubai. They have around 10 locations in Paris, where we visited them. The restaurants themselves are luxuriously designed, and they claim to serve gourmet burgers inspired by French cuisine. Their menu consisted of five beef burgers, plus several sandwiches, salads and soups. Each burger had a different type of cheese, and we ordered a Halles with beef, cheddar, tomato, lettuce, chives and mayo for 10 EUR (10 USD) plus french fries for 4 EUR (4 USD).

The text ”300 grams” next to our burgers on the menu turned out to be the entire hamburger – including the oversized bun. The actual meat was a pre-formed surprise in the middle, and the only thing good about it was that it was quite juicy and well-seasoned with salt. But it didn’t taste of much else, and was grey despite us ordering it medium rare. The dark cheese had a plastic texture, and the other toppings added nothing apart from some different textures. Chives seems to be a popular herb in French burgers, but we weren’t sold on it at all. The large bun had a crown that was covered with seeds, and was surprisingly enough soft, discreet pretty tasty. The fact that the french fries were undercooked and tasteless didn’t really come as a surprise.

L’Artisan du Burger’s statements and attitude were pretty bold, but they turned out to be just another tourist trap with no regards to quality or craftsmanship.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
