Fábrica Roca är en trendig restaurang och bar som drivs av mikrobryggeriet Roca i Pelotas. Den renoverade industrilokalen där de huserar känns genuint cool och är fylld med intressanta inredningsdetaljer som cementerar den känslan. Här samsas spännande öl med traditionella brasilianska rätter, pizza och givetvis även burgare. Vi beställde in deras smashburgare med maltbröd, en smashad köttpuck på 130 gram, cheddar, bacon, hårdstekt lök samt en burgardressing baserad på deras öl Psyche för 32 BRL (70 kronor).

Burgaren serverades riktigt snyggt på ett svart fat och såg härligt inbjudande ut i sin enkelhet. Den kändes bra i handen, men vi märkte direkt att deras maltbröd var lite matigare än vad vi är vana vid. Brödet var även för sött, och vi hade föredragit ett mer klassiskt burgarbröd – även om vi tyckte att användningen av detta maltbörd var en intressant idé. Köttet smakade gott om än något försiktigt, och vi hade gärna sett en mer robust stekyta för att verkligen få den där härliga smashburgarkänslan. Baconet var gott, men kunde ha varit lite krispigare, men som tur var lyckades den hårt stekta löken rädda burgaren med en välbehövlig krispighet. Burgardressingen som lät spännande på pappret var tyvärr inte så rolig som vi hade hoppats på, utan smakade väldigt mycket som en klassisk variant.

Överlag serverar Fábrica Roca en godkänd burgare där de högkvalitativa ingredienserna faktiskt märks av. Det är snarare tekniken och utförandet som måste finjusteras om de ska nå nästa nivå. Men vi besöker dem gärna igen, om inte annat för att njuta av det trevliga ölutbudet och den coola stämningen.

Fábrica Roca is a trendy restaurant and bar run by the Roca microbrewery in Pelotas. The renovated industrial space has a genuinely cool feel and is filled with interesting interior details that cement that feeling. Here, exciting beer is served with traditional Brazilian dishes, pizza and, of course, burgers. We ordered their smash burger with malt bread, a smashed 130-gram beef patty, cheddar, bacon, fried onions and a burger sauce based on their beer Psyche for 32 BRL (6.5 USD).

The burger came neatly served on a black plate and looked very inviting. It felt good in our hand, but we immediately noticed that their malt bread was heavier than what we are used to, and seeing as it also was too sweet we would have preferred a more classic burger bun. We do applaud the interesting use of malt in the bun though. The meat was tasty, but slightly under seasoned and we would also have liked a deeper crust to really get that great smash burger feel. The bacon tasted great albeit a bit soft, but luckily the fried onion managed to save the burger with a much needed crispy texture. The burger sauce that sounded exciting on paper turned out to be a pretty classic variety, and the beer was hardly noticeable.

Overall, Fábrica Roca serve a decent burger, and it’s clear that they use high quality ingredients. It is rather the technique and execution that needs to be fine-tuned if they want to reach a higher grade. But we’ll gladly visit them again for their nice beer selection and the cool atmosphere.

🏴󠁧󠁢󠁥󠁮󠁧󠁿 @black_bear_burger ★★★★☆

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
