Free State Kitchen är en liten restaurang i Liverpool, en kort promenad bort från de mest centrala delarna. De har en kort och koncis meny som fokuserar på amerikanska klassiska rätter, en trevligt inredd lokal och en väldigt mysig innergård. Burgarutbudet bestod av fem köttburgare och nästan lika många varianter med kyckling eller vegetariska alternativ. Vi beställde en The American Cheeseburger med en köttpuck på  140 gram, amerikansk ost, lök, senap och ketchup 11,75 GBP (145 kronor). I priset ingick dessutom en portion med rosmarinssaltade pommes frites, vilket alltid är en av våra favoriter. När vi beställde frågade servitrisen om köttets stekgrad och vi valde medium.

Vår hamburgare såg riktigt trevlig ut vid första anblick, även om brödet var lite i största laget. Men köttet var perfekt mediumstekt, vilket var väldigt uppskattat. Det hade dock ha fått kryddats med lite mer salt och peppar för att verkligen framhäva köttsmaken. Brödet var välrostat och snyggt och smakade härligt smörigt, men mycket av smaken i vår måltid kom från den stora mängden senap. En onödig miss som drog ned helhetsupplevelsen. Pommes fritesen var riktigt bra friterade, men vi hade gärna sett mer och bättre fördelad rosmarin så att man fick smaka den i varje tugga.

Free State Kitchen serverar en klart godkänd hamburgare och vi återvänder gärna för att sitta i deras trädgård igen. Men rent burgarmässigt så är de främst värda ett besök om du verkligen är i närheten.

Free State Kitchen is a small restaurant in Liverpool, a short walk from the most central parts. They have a short and concise menu that focuses om classic American dishes, nicely decorated interiors and a very cozy garden area. Their burger menu consists of five beef burgers and almost as many chicken and vegetarian options. We ordered their The American Cheeseburger with a 140-gram beef patty, American cheese, onions, ketchup and mustard for 11.75 GBP (14.5 USD). The price included an order or rosemary salted french fries as well. During our order we were asked how we wanted our beef, and we chose medium.

Our burger looked really promising at first glance, even though the bun was a bit too large for our tastes. But the beef was cooked perfectly pink, which we appreciated. But it could have done with some salt and pepper in order to enhance the flavours. The bun was nicely toasted, looked great and had a buttery taste, but most of the flavours from our meal came from the large amounts of mustard. The burger was practically covered with it, which felt like an unnecessary oversight. The french fries were well-cooked, but we would have preferred more and better distributed amounts of rosemary.

Free State Kitchen serve a decent burger, and we’d be happy to return just to hang out in their garden again. But burger-wise they’re mainly worth a visit if you’re already in the area.

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
