Vanligtvis befinner sig Mother Flipper på flera av Londons marknader, bland annat den trendiga marknaden Brockley Market men vi fick nöjet att testa deras burgare ”The Candy Special” under National Burger Day. Denna burgare har även sedan tidigare figurerat som kampanjburgare hos välkända Honest Burgers (4/5).

The Candy Special bestod av en 130 gram stor högrevspuck, cheddarost, kanderat bacon, tunn pommes frites av shoestring-typ, deras egengjorda dressing samt picklad gurka. Det kanderade baconet var som förväntat riktigt gott, och sådär perfekt krispigt som vi vill ha det. Även brödet var gott och hade en bra stuns i sig, även om undersidan kunde ha rostats lite längre för att hålla ihop burgaren bättre.

En av de största besvikelserna var tyvärr att shoestring-pommesfritesen i själva burgaren blev sega och mjuka direkt, och inte lyckades få till den där krispiga texturen. Även köttet var rätt tråkigt, särskilt i jämförelse med alla andra burgarhak vi testade under burgarfestivalen som använde både hängmörat kött och smash-tekniken vid tillagningen för maximal smak.

Men med det sagt var det en trevlig och god burgare överlag. Priset på 7,5 pund (cirka 85 kronor) var helt okej, och trots att det såg mer spännande ut på pappret än själva resultatet uppbådade så var vi ändå nöjda med vårt beslut att testa dem. Kanske gör de sig bättre på marknaden än på en renodlad burgarfestival.

We had the pleasure to try Mother Flipper’s burger ”The Candy Special” during National Burger Day in London, consisting of a 130 gram chuck steak patty, American cheese, candied bacon, shoe-string fries, special sauce and pickles. The candied bacon was super delicious and had a perfect crispiness to it. The bun was good too, even though it really couldn’t handle all the dressing and meat juice. The biggest disappointment were the shoe-string fries that immediately went limp and didn’t deliver the much needed texture to the burger. The patty was a bit bland too, especially in comparison with all the other contenders at National Burger Day. But with that being said, we still felt quite satisfied after devouring it. Perhaps they fare better in their semi-regular spot at various London markets, such as Brockley Market.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
