De två vännerna Laurence och Frank inledde sin kulinariska resa med att salta kött i en släktings skjul under universitetstiden. Idag, sex år senare, driver de en av enheterna i den trendiga foodcourten Boxpark i London och har nyligen öppnat en helt egen restaurang i Brighton. När vi besökte dem hade fyra burgare på menyn och vi valde deras Bacon Cheeseburger med hängmörat kött, ost, rökt pancettabacon, pickles, lök och talgmajonnäs för 9,5 GBP (125 kronor).

Burgaren serverades hårt invirad i papper, men trots detta så var den imponerande välbyggd och snyggt bevarad. Det sesamtäckta brödet var härligt mjukt och hade fått en rejäl rostning på insidan, precis som vi gillar det. Den första vi reagerade på när vi väl började äta var det otroligt goda pancettabaconet, som tillförde ett helt perfekt krisp och riktig dominant sälta till smakbilden. Det hängmörade köttet var saftigt och hade en trevlig textur, men smaken lyckades aldrig riktigt överglänsa baconet och kom inte till sin fulla rätt under måltiden. Deras pickles lämnade tyvärr också en del att önska, och syrligheten som hade behövts för att skapa en balans i smakerna uteblev tyvärr. Löken gav visserligen burgaren ännu mer krisp, men eftersmaken var något för skarp i och störde en del. Talgmajonnäsen däremot var väldigt god med sin mjuka och djupa smak som faktiskt avrundade måltiden riktigt fint.

Salt Sheds burgare lovade mycket, men var i slutändan lite för enkel och försiktig för sitt eget bästa. De har däremot en otrolig potential att göra något riktigt bra med sina burgare, och övriga köttmenyn såg verkligen lovande ut. Nu hoppas vi bara att de lyckas kombinera sina grymma ingredienser och finslipa detaljerna så att resultatet blir vassare.

The two friends Laurence and Frank started their culinary journey by salting meat in a relative’s shed during their university days. Six years later, they run one of the units in the trendy Boxpark food court in London and have recently opened their very own restaurant in Brighton. When we visited them, they had four burgers on the menu and we chose their Bacon Cheeseburger with dry-aged beef, cheese, smoked pancetta bacon, pickles, onions and beef dripping mayo for 9.5 GBP (12 USD).

The burger arrived tightly wrapped in paper, but still held together well and was impressively constructed. The sesame-covered bun was wonderfully soft and was nicely toasted on the inside, just the way we like it. The first thing we noticed when we started eating was how amazing the pancetta bacon tasted. It added a perfect crunch and really dominant saltiness to the burger. The dry-aged beef patty was juicy and had a nice texture, but the flavours didn’t rise to the occasion and was eclipsed by the bacon. Their pickles unfortunately also left something to be desired, as we would have needed some acidity to balance the flavours. The onion did give the burger some nice textures but the aftertaste was a bit too sharp and got in the way a bit. The beef dripping mayo, on the other hand, was very good with its soft and deep flavours that rounded off the meal really nicely.

Salt Shed’s burger promised a lot, but was ultimately a little too simple and cautious for its own good. However, they have an incredible potential to do something amazing with their burgers, and the rest of their meat menu looks really promising. Fingers crossed that they manage to combine their awesome ingredients and work on the details for a sharper result.

Thellas is a food truck in Gävle that we’ve heard a lot of positive things about since they opened in 2024. The menu at the time of our visit consisted of four beef burgers and a vegetarian option. We chose the classic ”Thellas Cheese” cheeseburger with double burger cheese, silver onions, dill pickles, ketchup, mustard and mayonnaise. A single patty burger cost 115 SEK (12.5 USD), but we ordered a double 120-gram patty burger with for 145 SEK (15.5 USD) and also added 30 SEK (3 USD) for french fries and 15 SEK (1.5 USD) for a chili mayo.

There was a long line of people waiting for their food, and when the burger was served we were greeted by a well-composed and inviting cheeseburger. The first bite was incredibly flavourful and juicy, with a very clear crust on the patties. The beef was well-seasoned with a generous amount of coarsely ground black pepper. And the creamy cheese was delicious and nicely melted over the beef. Unfortunately, the bun was a bit of a disappointment, because despite looking good, it had been toasted for too long on the grill and lacked the fluffy texture we expect from a brioche bun. Their own-pickled cucumber was delicious and added both acidity and crunch, and we would have liked to see more of it so that it was spread over the entire burger. All the sauces did their job without standing out and were also in the right amount, without any one of them overpowering the others. We also liked the generous portion of crispy french fries, and the smoky chilli mayo was tasty – although it could have been a bit spicier.

Thellas undoubtedly serve one of the better burgers we’ve eaten in Gävle, and the service from the guys in the food truck was excellent as well. We definitely recommend keeping an eye on their schedule and visiting them if you’re in the area.
