Tysklands bästa burgare

Goldies slog upp sina portar under 2017 mitt i hjärtat av Kreuzberg i Berlin med målet att höja pommes fritesen till en ny kulinarisk nivå. Fem år senare har de skaffat sig en stark följarskara, och nu har de påbörjat en ny spännande resa för att servera stadens första autentiska smashburgare på sin andra restaurang Goldies Smash Burger på Graefestraße, en 10-minuterspromenad bort från originalrestaurangen.

Menyn var fokuserad och tajt med fyra burgare, som även gick att få i veganskt och vegetariskt utförande, där en dubbelburgare kostade 9–11 EUR (95–115 kronor). Vi beställde en klassisk dubbel cheeseburgare samt deras Super Smash Brother-burgare med ost, strimlad sallad, specialsås, pickles och silverlök tillsammans med en portion pommes frites för 3,50 EUR (35 kronor). Burgarna serverades uppåtvända i en pappkartong på ett klassiskt In-N-Out-manér som givetvis fick vårt burgarhjärta att bulta lite hårdare. Och denna homage gick igenom under stora delar av måltiden. Ration för dubbelburgarna var verkligen exemplarisk, och potatisbrödet från Martin’s var rostat med stor omsorg. Köttets stekyta var även den riktigt fin, och den gedigna kryddningen bidrog till att det verkligen smakade mycket. Vi skulle gärna ha sett lite mindre ketchup på vår cheeseburgare som blev lite överväldigad rent smakmässigt, samtidigt som deras pickles borde ha haft mer syrlighet för att verkligen ro upplevelsen i hamn. Vi upplevde även burgarna lite väl mjuka, men det var inget som störde för mycket. Pommes fritesen var jättegoda med ett rejält krisp och en fin potatissmak, men vi hade inte förväntat oss något annat. Som vanligt i Tyskland så hade dessutom ketchupen en eftersmak av curry, vilket kan vara värt att ha i åtanke.

Goldies gör faktiskt något väldigt unikt i Berlins burgarscen, nämligen att prioritera enkelheten samtidigt som de anammar smashburgarnas historia. De når precis upp till guldstandarden, och serverar Berlins bästa burgare.

Goldies first opened back in 2017 in the heart of Kreuzberg, Berlin, with lofty goals to elevate french fries to a completely new level. Five years have passed, and with a large fan following they now have taken the next exciting step to serve the first authentic smash burgers at their second restaurant Goldies Smash Burger on Graefestraße, a short 10 minute walk from their original location.

Their short and sweet menu consisted of four different burgers, which could all be ordered as vegetarian or vegan versions. A double-patty burger cost 9–11 EUR (9.5–11.5 USD), and we ordered a classic double Cheeseburger plus their Super Smash Brother burger with cheese, shredded lettuce, special sauce, pickles and white onions, plus an order of french fries for 3.5 EUR (3.5 USD). Our burgers came served facing upwards in a paper pocket à la In-N-Out, which of course made our burger loving hearts beat faster. And this homage was present throughout our meal. The bun to patty ratio for their double burgers was perfect, and the potato bun from Martin’s had been toasted just right. The crust was great too, and the hefty seasoning really brought out the beefy flavours. We would have preferred less ketchup on our Cheeseburger, as it was a bit overpowering, and their pickles could have been a bit sharper. The burgers were also very soft overall, but this was only a minor issue. Their french fries were amazing, as they should be, crispy and with a great potato flavour. As is usual in Germany, their ketchup had a curry aftertaste, which can be worth taking note of before you douse your fries in them.

Goldies does something that’s unique for Berlin’s burger scene; prioritizing simplicity while at the same time respecting the history of smash burgers. They just manage to hit that gold standard, and serve the best burger we’ve eaten in Berlin.

Bar Luca is a cool and loud bar just a stone’s throw from the Opera House in central Sydney. They have been going viral for a while with one of their campaign burgers, which now has a permanent place on their menu. So when we were there, it was the obvious choice. The burger was called Blame Canada and consisted of a single beef patty, American cheese, maple syrup-glazed bacon, maple syrup aioli, poutine and fries inside the burger. The price was 20 AUD (14 USD).

Our burger still looked pretty good when it arrived, shiny from the maple syrup and with a patty with a decent crust. The beef tasted fine, even if it was a bit burnt in some places and would have benefited from a looser texture. The crown of the bun was a bit squashed, but it still held together surprisingly well and tasted great. The bacon was also unexpectedly crispy, and we liked the nice and flavourful maple syrup glaze. But it was very sweet overall with all the maple syrup, which literally dripped from the burger. This made the whole burger really sticky and quite difficult to handle – even if it also meant that we ate the whole thing at once. The fries that were under the patty itself were very soft and completely lacked crunch, probably because they were steamed by being placed directly in the burger. And we would have really preferred a bit larger cheese curds in the poutine, as the texture was a bit unappealing.

Blame Canada sounded very interesting on paper, and we can see why the burger has gone viral and become so popular. And even if everything was alright, it had too many technical mistakes to become a real favourite. But if you are in the mood for a sweet and sticky burger while listening to some loud music, Bar Luca is there for you.

Royal Stacks is a Melbourne-based burger chain that was founded in 2016 after their founder Dani travelled to the US and got a healthy dose of inspiration. They are still expanding, and currently have more than 10 restaurants that are decorated with plenty of well-known pop culture references. The five beef burgers on the menu are clearly inspired by Shake Shack, but with a slightly cooler attitude. We ordered a Bacon Bacon; a double burger with cheese, caramelised onions, double bacon, pickles, ketchup and mustard for 23 AUD (16.5 USD).

Our burger looked good, but we were a bit worried about the large amount of ketchup that was piled on top of the bacon. Fortunately, we were pleasantly surprised by how well the ketchup tied the flavours together, and the sweetness and intense tomato flavour really made their mark here. The beef patties were tender, tasty and well-seasoned, but the bun was a bit too soft and should have been toasted a lot more. Fortunately, it held everything together well, so it wasn’t a big problem. On the ingredients front, the cheese provided a welcome creaminess, and we also liked the strong dill flavour of the pickles – although we would have preferred them to be thicker sliced and to have had more of them. They were already gone halfway through the burger. The bacon was a bit too soft and would have benefited from being crisper, but despite the slightly pale appearance, it was cooked pretty well. The caramelised onions were also a bit too soft, and we would have preferred raw onions here for a more interesting texture. Overall, the burger had well-balanced proportions, although everything was a bit softer than we would have liked.

Royal Stacks is a nice Australian fast casual chain that serves well made and affordable burgers in a cool environment. They are definitely worth checking out the next time you’re in Melbourne.
