Nu när gourmetburgartrenden har kommit igång med full kraft även i Tokyo går det att hitta burgarrestauranger runt nästan varje hörn. Men 1996 var det ett annorlunda klimat, och när Fire House öppnade sina dörrar för 20 år sedan var det ett av de få burgarhak som försökte ta burgaren ur snabbmatsfacket.

Deras lokal är enkelt och charmigt inredd. Som middagsgäst får du insyn in i köket, vilket vi alltid tycker är en trevlig detalj. Själva menyn bjöd på 15 olika sorters burgare, vissa mer uppseendeväckande än andra. Vad sägs om en burgare med äppelklyftor eller varför inte en burgare med teriyakisås? Vi nöjde oss i alla fall med att beställa en klassisk cheeseburgare med bacon.

Burgaren som serverades hade många klassiska kännetecken på att det var en japansk burgare, som ett gigantiskt fluffigt bröd och en ganska tunn köttpuck. Den största överraskningen var faktiskt att köttet var lite rosa i mitten, något som fortfarande är väldigt ovanligt i Japan. Köttet kunde ha varit mindre kompakt, men köttsmaken var god vilket faktiskt är huvudsaken.

Den största nackdelen med burgaren var att deras relishblandning tog över alldeles för mycket av smaken. Men förutom detta var det överlag en riktigt bra burgare. Priset på strax över 100 kronor är snäppet högre än de flesta andra burgarhak i Tokyo, men i slutändan var det värt det.

Fire House in the Bunkyo area of Tokyo have been serving high quality burgers since 1996. Their expansive menu of 15 burgers offers some truly imaginable creations, such as a burger with apple slices, but we chose their classic bacon cheeseburger instead. The bun was really big and fluffy as always in Japan, and the biggest surprise was the nice pink center of the patty (which is quite uncommon in Japan). Apart from their relish, which unfortunately overpowered some of the flavours, we felt that the burger was really good overall. Fire House serve one of the best burgers in Tokyo and are well worth a visit.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
