Bull Burger är en restaurang belägen i centrala Belgrad i Serbien. Vi tog dock tillfället i akt att testa deras burgare när de deltog i Belgrade Burger Festival. Vi beställde deras Original, som bestod av två smashade köttpuckar, ost, lök, pickles, senap och ketchup och som kostade 750 RSD (75 kronor).

Kocken stod glatt framför oss och stylade medan han tillagade vår mat, så vi kände oss ändå ganska hoppfulla om att detta skulle bli något bra. Och burgaren som vi fick såg också helt okej ut, även om den såg lite väl brödtung ut. Men när vi började äta märkte vi tyvärr att hela burgaren var väldigt tuggig. Köttet hade visserligen en helt okej stekyta och var inte alls så överarbetat som vi befarade att det skulle vara. Men det hade knappt kryddats alls, och smakade därför inte särskilt mycket. Det stora brödet var det största problemet – trots att det smakade rätt trevligt – då det var svampigt, degigt, tuggigt och helt orostat. Osten hade i alla fall smält ordentligt och bidrog med lite efterlängtad krämighet, men de övriga ingredienserna led av problem med proportionerna. Vi fick bara två väldigt mjuka pickles i hela burgaren, och även rödlöken var alldeles för mjuk. All senap låg dessutom som en stor klick i mitten av hamburgaren.

Bull Burger visade att de hade ambitioner, men de stora och avgörande problemen måste åtgärdas för att vi ska ge dem en rekommendation. Vi hoppas dock att de följer med i utvecklingen av Serbiens burgarscen, för om de skärper till sig så har de ändå rätt tänk och potential att göra något bra med de trevliga råvarorna.

Bull Burger is a restaurant located in the centre of Belgrade, Serbia. However, we took the opportunity to try their burgers when they participated in the Belgrade Burger Festival. We ordered their Original, which consisted of two smashed beef patties, cheese, onions, pickles, ketchup and mustard, and cost 750 RSD (7 USD).

The chef stood cheerfully in front of us, styling while he cooked our food, so we still felt quite hopeful that this would be something good. And the burger we got also looked pretty decent, albeit a bit too bread-heavy. Unfortunately, when we started eating, the entire burger turned out to be very chewy. The patty was decent and not nearly as overworked as we feared it would be. But it had hardly been seasoned at all, so it didn’t have much flavour. The big bun was the biggest problem, and even though it tasted quite nice it turned ot to be spongy, doughy, chewy and completely untoasted. The cheese had at least been properly melted and provided some much needed creaminess, but the other ingredients suffered from ratio problems. We only got two very soft pickles in the whole burger, and even the red onion was far too soft as well. All the mustard was also just a big dollop in the centre of our burger.

Bull Burger showed that they had ambitions, but several crucial problems need to be addressed before we can give them our recommendation. However, we hope they keep up with the development of Serbia’s burger scene, because if they get their act together, they still have the right mindset and potential to do something good with their nice ingredients.

Bar Luca is a cool and loud bar just a stone’s throw from the Opera House in central Sydney. They have been going viral for a while with one of their campaign burgers, which now has a permanent place on their menu. So when we were there, it was the obvious choice. The burger was called Blame Canada and consisted of a single beef patty, American cheese, maple syrup-glazed bacon, maple syrup aioli, poutine and fries inside the burger. The price was 20 AUD (14 USD).

Our burger still looked pretty good when it arrived, shiny from the maple syrup and with a patty with a decent crust. The beef tasted fine, even if it was a bit burnt in some places and would have benefited from a looser texture. The crown of the bun was a bit squashed, but it still held together surprisingly well and tasted great. The bacon was also unexpectedly crispy, and we liked the nice and flavourful maple syrup glaze. But it was very sweet overall with all the maple syrup, which literally dripped from the burger. This made the whole burger really sticky and quite difficult to handle – even if it also meant that we ate the whole thing at once. The fries that were under the patty itself were very soft and completely lacked crunch, probably because they were steamed by being placed directly in the burger. And we would have really preferred a bit larger cheese curds in the poutine, as the texture was a bit unappealing.

Blame Canada sounded very interesting on paper, and we can see why the burger has gone viral and become so popular. And even if everything was alright, it had too many technical mistakes to become a real favourite. But if you are in the mood for a sweet and sticky burger while listening to some loud music, Bar Luca is there for you.

Royal Stacks is a Melbourne-based burger chain that was founded in 2016 after their founder Dani travelled to the US and got a healthy dose of inspiration. They are still expanding, and currently have more than 10 restaurants that are decorated with plenty of well-known pop culture references. The five beef burgers on the menu are clearly inspired by Shake Shack, but with a slightly cooler attitude. We ordered a Bacon Bacon; a double burger with cheese, caramelised onions, double bacon, pickles, ketchup and mustard for 23 AUD (16.5 USD).

Our burger looked good, but we were a bit worried about the large amount of ketchup that was piled on top of the bacon. Fortunately, we were pleasantly surprised by how well the ketchup tied the flavours together, and the sweetness and intense tomato flavour really made their mark here. The beef patties were tender, tasty and well-seasoned, but the bun was a bit too soft and should have been toasted a lot more. Fortunately, it held everything together well, so it wasn’t a big problem. On the ingredients front, the cheese provided a welcome creaminess, and we also liked the strong dill flavour of the pickles – although we would have preferred them to be thicker sliced and to have had more of them. They were already gone halfway through the burger. The bacon was a bit too soft and would have benefited from being crisper, but despite the slightly pale appearance, it was cooked pretty well. The caramelised onions were also a bit too soft, and we would have preferred raw onions here for a more interesting texture. Overall, the burger had well-balanced proportions, although everything was a bit softer than we would have liked.

Royal Stacks is a nice Australian fast casual chain that serves well made and affordable burgers in a cool environment. They are definitely worth checking out the next time you’re in Melbourne.
