Gimmickburgare på rätt sätt

Tepuy Burger har restauranger i Alicante och Benidorm i Spanien, men vi fick faktiskt smaka deras burgare när vi besökte finalen för burgarfestivalen The Champions Burger i Barcelona. På festivalen serverade de en burgare som kallades Rabiosa och som var minst sagt speciell. Den hade en köttpuck gjord på 45 dagars hängmörat kött, provoloneost och bacon. Burgaren delades sedan i två delar och doppades i smält cheddarost, varefter varje halva doppades i antingen krossade Doritos eller Takis. Burgaren kostade 12,50 euro (140 kronor) under festivalen.

Vår burgare serverades alltså i två delar, och lyste uppfestivaleområdet med sina kemiskt gula och orange färger. Under det rika lagret med krossade majschips kunde vi se ett väldigt rosa kött. Köttet hade ändå en rejäl stekyta, och den kraftiga smaken från det 45 dagars hängmörade köttet var utsökt. Brödet var dock lite för mjukt och hade behövt rostas mer för att bättre textur. Ostsåsen var god med en tydlig cheddarsmak och tillförde en välbehövlig krämighet, men det som verkligen gjorde burgaren var chipsen, som bidrog med sälta och textur på ett helt nytt sätt. Varianten med Takisen var fenomenal då den bidrog med både hetta och syra, och vi saknade denna komplexitet i halvan med Doritos. Den ensamma baconskivan trädde dock inte fram tillräckligt och kändes som ett onödigt tillskott

Tepuy Burger lyckades verkligen skapa en gimmickburgare på bästa möjliga sett. Vi har tittat på deras meny och ser att de skapar både vilda och klassiska burgare på menyn, och vi ser verkligen fram emot att besöka någon av deras riktiga restauranger i Benidorm och Alicante för att se utforska deras burgarutbud.

Tepuy Burger has restaurants in Alicante and Benidorm in Spain, but we actually got to taste their hamburgers when we visited The Champions Burger finals in Barcelona. At the festival, they served a burger called Rabiosa, which was pretty unique. It had a patty made from 45-day dry-aged beef, provolone cheese and bacon. The burger was then cut in half and dipped in melted cheddar cheese, with each half dipped in either crushed Doritos or Takis. The burger cost 12.50 EUR (13.5 USD) during the festival.

So, our burger arrived in two parts, lighting up the festival with its chemical yellow and orange colours. Under the rich layer of crushed corn chips, we could see a very pink patty. It still had a great crust, and the strong flavour of the 45-day dry-aged beef was delicious. However, the bread was a little too soft and should have been toasted more for better texture. The cheese sauce was tasty with a distinct cheddar flavour and added a much-needed creaminess, but what really made the burger was the chips that added saltiness and texture in a whole new way. The Takis half was phenomenal as it brought both heat and acidity, and we missed this complexity in the Doritos half. The lone slice of bacon, however, did not stand out enough and felt like an unnecessary addition.

Tepuy Burger really managed to create the best kind of gimmick burger. We have looked at their menu and can see that they create both wild and classic burgers on the menu, and we really look forward to visiting one of their proper restaurants in Benidorm and Alicante to explore their burger range.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
