Umbrella Sociedad de Hamburguesas är en hamburgerrestaurang som finns i flera städer runt om i Spanien, som vi besökte på burgarfestivalen The Champions Burger i Madrid. På sina restauranger serverar de en handfull olika smashburgare, men på den kringresande festivalen hade de endast specialburgaren Kalifornia med två smashade köttpuckar, cheddar, äppelträrökt bacon, en sötsur löksylt samt något som kallades för ”Brad Pitt-sås”. Den kostade 12 EUR (140 kronor).

Kön ringlande sig lång till den lilla trucken, men det dröjde inte länge efter att vi lagt vår beställning innan vi fick våra burgare i handen. Hamburgaren hade en rejält smashad stekyta och ett inbjudande utseende. Första tuggan bjöd på rejäla smaker och en välbalanserad komposition. Vi tyckte dock att köttet kunde ha varit lite saftigare, och att de kunde ha lagt lite mer tid på att rosta det annars väldigt goda brödet. Kanske berodde detta på det höga serveringstrycket på festivalen, men det kändes ändå som en onödig miss. Efter några tuggor kunde vi konstatera att baconet tillförde en väldigt smakrik rökighet, och tillsammans med hettan från Brad Pitt-såsen så skapades ett riktigt fint helhetsintryck. Löksylten bidrog med en väldigt djup smak som fungerade riktigt bra med övriga ingredienser. Vi fick bara en ostskiva i burgaren, och hade uppskattat att få åtminstone en skiva per köttpuck då detta nog hade bidragit till en krämigare burgare.

Av smakerna att döma så vet Umbrella Sociedad de Hamburguesas vad de håller på med, men några mindre missar håller dem ändå tillbaka. Men vi ser ändå fram emot att testa dem på plats för att se om detaljerna sitter lite bättre på hemmaplan.

Umbrella Sociedad de Hamburguesas is a burger chain with restaurants all around Spain, and we visited them at the burger festival The Champions Burger in Madrid. In permanent locations they serve a handful of different smash burgers, but at the travelling festival they only had the special Kalifornia burger. It cost 12 EUR (13 USD) and contained two smashed beef patties, cheddar, applewood smoked bacon, a sweet and sour onion jam and something called ”Brad Pitt sauce”.

There was a long queue outside the small foodtruck, but it didn’t take long for our order to arrive. The burger had a nicely smashed crust and looked really inviting. The first bite offered up distinct flavours and felt very well-balanced. However, the meat could have been a little juicier and even though the bun was very tasty it could have been toasted a bit longer. Perhaps this was due to the tempo at the festival, but it still felt like an unnecessary mistake. The tasty smokiness from the bacon emerged after a few bites, and blended really well with the heat from the Brad Pitt sauce. The onion jam added a very deep flavour that worked really well with the other ingredients. We only got one cheese slice in the burger, and would have appreciated at least one slice per patty, as this would have contributed to a creamier burger.

Umbrella Sociedad de Hamburguesas know what they are doing flavour-wise, but a few smaller mistakes are holding them back. With that being said, we still look forward to visiting one of their actual sites to see how they fare in one of their real restaurants.

Local Tide is a hyped fish restaurant in central Seattle. And while most of the menu focuses on seafood, their burger has also become a bit of a talking point. They don’t take reservations, and when we arrived there were around 20 people queuing outside the small restaurant, with an hour-long wait. Luckily, there was space next door at Aslan Brewing, which served their burger and a handful of other dishes from Local Tide. We ordered their Smash Burger with beef, cheese, caramelised onions and mayo in a brioche bun for 10 USD, as well as a portion of Salt and Pepper Fries for 8 USD. We also tried their Salmon Sando for 16 USD.

After waiting around an hour for our food, our burger arrived neatly presented on a small plate. The bun looked a little flat but was lighter and fluffier than we’d expected. The beef was incredibly juicy and well salted, while the cheese was both creamy and flavourful. The caramelised onions were packed with umami and really enhanced the flavour of the beef. Both the bun and beef had a decent crust, although both could’ve been cooked a little more. Our main critique was that the burger would’ve been even better with a few more crispy components, and perhaps a bit bigger. The fries were like potato wedges and were incredibly well cooked. The generous portion was crispy and well seasoned, and their homemade ketchup was really tasty. The 16 USD salmon burger also impressed us with its fresh salmon fillet, great textures and fresh flavours.

It’s great to see a seafood restaurant serving burgers as good as the ones at Local Tide. The other seafood dishes are of course also worth trying, but make sure to arrive early and be prepared to wait a while for your food.
