Foodtrucken Matsas Mat hamnade på vår att göra-lista 2018 när de först vann Foodtruck-SM och sedan tog hem EM-segern i Berlin. Efter mycket om och men lyckades vi äntligen ta oss till Bollnäs för att testa dessa omtalade burgare. Trucken stod vackert belägen bredvid vattnet med en otroligt härlig utsikt, och bredde ut sig med en rejäl uteservering med både tak och värmelampor. Deras tre burgare innehöll alla tomat, ruccola, bladspenat, picklad rödlök, dijonsenap och egenslungad bearnaisesås, och sedan fick man välja vilken av de tre ostarna man ville ha samt köttstorlek – från 90 till 250 gram. På personalens rekommendation beställde vi tre dubbelburgare med 160 gram kött samt chiliost, västerbottenost och gorgonzola. De kostade endast 95 kronor styck.

Burgarna serverades på pappersfat med varsin trägaffel, och visuellt sett så var de ganska slarvigt hopbyggda. Vid första tuggan fick vi en nostalgisk känsla. Köttet var saftigt och fint, med en godkänd stekyta och en fin och tydlig köttsmak. Men brödet var orostat och alldeles för stort. Det hade nog passat bättre för deras största burgare, och med dubbelburgaren tog det för mycket plats med sin anmärkningsvärt söta smak. Bearnaisesåsen var riktigt smakrik och krämig, och troligtvis var det den som tillförde den nostalgiska kicken. Vi var dock inga större fans av ruccolan och spenaten som mest var i vägen. Bland ostvarianterna var det den EM-vinnande chiliosten som var överlägset bäst, då den bidrog med både krämighet och intressant hetta. Gorgonzolan och västerbottenosten förde mest tankarna till köttmackor, och hade dessutom ganska tråkiga texturer störde smakbilden.

Sammanfattningsvis serverar Matsas Mat lite lyxiga kioskburgare. Inte mycket har förändrats med burgaren sedan 2018, och det märks att tiden har stått still och i viss mån sprungit ifrån dem. Men vi återvänder gärna, och rekommenderar helt klart ett besök – både för den vackra utsikten och för att insupa lite burgarhistoria.

The food truck Matsas Mat made it onto our to-do list back in 2018 when they first won the Swedish Foodtruck Championships and then went on to win gold at the European Championships in Berlin. And we have just finally made it to Bollnäs to try their famous burgers. The truck was beautifully located next to the water with a stunning view, and spread out with a large outdoor seating area with both a roof and heating lamps. The three burgers they offered all came with tomato, arugula, spinach, pickled red onions, dijon mustard and their very own bearnaise sauce, and then you could choose which of the three cheeses you wanted and the size of the meat – from 90 to 250 grams. On the staff’s recommendation, we ordered three double burgers with 160 grams of meat and one of each with chilli cheese, Västerbotten cheese and gorgonzola. They cost just 95 SEK (8.5 USD) each.

The burgers were served on paper plates with each wooden fork, and visually they were rather sloppily assembled. Our first bite gave us a nostalgic feeling. The meat was juicy and fine, with a decent crust and a distinct beefiness. But the bread was untoasted and far too big. It would probably have been better suited for their largest burger, as it took up too much space here with its noticeably sweet flavour. The béarnaise sauce was really tasty and creamy, and probably was what added the nostalgic kick. However, we weren’t big fans of the arugula and spinach which mostly got in the way. Among the cheeses, the championship-winning chilli cheese was by far the best, adding both creaminess and interesting heat. The Gorgonzola and the Västerbotten cheese gave the meal a beef sandwich feeling, and they also had rather obtrusive textures that interfered with the flavour.

In summary, Matsas Mat serves somewhat luxurious kiosk burgers. Not much has changed with the burger since 2018, and it’s apparent that time has stood still and to some extent run away from them. But we are happy to return, and definitely recommend a visit – both for the beautiful view and to soak up some burger history.

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
