Firehouse Kitchen öppnade i Kungsbacka strax söder om Göteborg under slutet av 2021, när de tog över den gamla grillkiosken på Kungsbacka torg. Vi hade läst om deras generösa öppettider och de nya ägarnas höga ambitioner, och var därför väldigt förväntansfulla när vi besökte dem. Firehouse Kitchen serverar främst korv och hamburgare, och på burgarfronten består menyn av sex hamburgare med kött och en med halloumi. En enkel hamburgare med 100 gram högrev kostar 99 kronor och en dubbelburgare kostade 119 kronor. Till detta ingick pommes frites i priset.

Vi beställde in en dubbel Cheese n Bacon med bacon, cheddar, krispsallad, tomat, rödlök och dressing. Efter en skaplig stunds väntan fick vi in vår hamburgare. Den var ganska slarvigt hopbyggd, men vi hoppades såklart att smaken skulle överträffa utseendet. Tyvärr smakade den ungefär som den såg ut, och den hade flera uppenbara problem. Visst, köttet var ganska gott och höll en rimlig kvalitet, men den hade knappt någon stekyta alls och hade inte heller kryddats med särskilt mycket salt eller peppar. Det vi kände mest smak av var senapen och ketchupen, då burgaren var täckt med alldeles för mycket av dessa. Det blev inte heller bättre av att de hade använt en klassisk gatukökssenap istället för en gul amerikansk senap. Till och med burgardressingen hamnade i skymundan. Brödet var visserligen fluffigt och smakade gott, men det hade mått bra av att ha rostats något på stekbordet först.

Firehouse Kitchens burgare hade flera lättåtgärdade problem, och visar att hög ambition inte leder till ett bra slutresultat per automatik om man inte lärt sig grunderna ordentligt. Det finns flera alternativ som är bättre bara i Kungsbacka just nu, så vi hoppas att de tar till sig av kritiken och förbättrar sin teknik.

Firehouse Kitchen opened in Kungsbacka just south of Gothenburg at the end of 2021, when they took over the old grill kiosk on Kungsbacka’s main square. We had heard about their generous opening hours and the new owner’s high ambitions, and our expectations were high when we visited them. Firehouse Kitchen mainly serve sausages and hamburgers, and their burger menu consists of six beef burgers and a halloumi option. A single 100-gram patty costs 99 SEK (10.5 USD) and a double burgers costs 119 SEK (12.5 USD). French fries are included in the price.

We ordered a double Cheese n Bacon Burger with bacon, cheddar, lettuce, tomato, red onions and burger sauce. After a reasonably short wait our hamburger arrived, looking a bit worse for wear. It hadn’t been assembled with very much love, but we still hoped that the flavours would be there. But to be honest it tasted just like it looked, and there were several glaring issues. Sure, the beef had some nice flavours to it and seemed to be of high quality chuck, but it hardly had any crust or seasoning from salt or pepper. The main flavours came from the large amounts of ketchup and mustard, especially since they used a regular Swedish grill kiosk mustard instead of an American yellow mustard. Not even the burger sauce stood a chance. The bun was pretty nice and fluffy, but it would have benefited from some time on the griddle as well.

Firehouse Kitchen’s had several problems that should have been easily avoided, and just proves that high ambitions don’t automatically lead to great results if the basics aren’t there. There are several better options just in Kungsbacka, so we really hope that they take these criticisms to heart and start improving their techniques.

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
