Under 2022 öppnade gänget bakom Barrels Burgers & Beer och Stigbergets Fot hantverksbageriet Panem i Gamla Stan, där bakverken och sötsakerna skapas av mästerkonditorn Gustaf Mabrouk. Vi testade deras burgare tidigt under 2023 och tyckte överlag att burgaren var god, men att det fanns detaljer att finslipa. De har fortfarande en köttburgare på menyn, och den innehåller cheddar, sallad, silverlök, pickles och deras hemliga sås. Vi beställde en dubbelburgare för 164 kronor samt en portion pommes frites för 46 kronor.

Burgaren som serverades såg riktigt fin ut, med en rejäl crust på köttet och välsmält ost. Det svenska köttet hade en tydligt framträdande smak med djupa bifftoner som lyste igenom i varje tugga. Tyvärr så var brödets krona kall och saknade stekyta på insidan, vilket var synd då vi annars älskade deras fenomenala egenbakade sesambröd. Det smakade gott och hade en härlig textur med en lätt seghet, samtidigt som det var enkelt att bita igenom. Dressingen var klart bättre än förra gången, och smakade som en vuxnare och inte lika söt burgardressing. Den bidrog dessutom med mycket krämighet tillsammans med osten. Salladen och löken var fräscha och vältempererade, men vi tyckte att deras salta pickles störde smakbilden. Vi hade föredragit en något syrligare variant med mer dillsmak för att bryta igenom alla de andra smakintensiva komponenterna. Pommes fritsen var krispiga med en trevlig potatissmak och lagom sälta som gjorde att det var svårt att sluta äta dem trots att vi blivit mätta.

Panem har verkligen steppat upp sin burgare sedan vårt senaste besök, och vi ser att de närmar sig sina syskonrestauranger – mycket tack vare burgarbrödet som verkligen ligger i framkant. Och missa inte heller deras sötsaker, som är den perfekta avrundningen på en utmärkt burgarmåltid.

In 2022, the team behind Barrels Burgers & Beer and Stigbergets Fot opened the artisan bakery Panem in Gamla Stan, offering pastries and sweets created by Master Confectioner Gustaf Mabrouk. We tested their burgers early in 2023 and found the burger to be nice overall, but that there were details that needed tweaking. They still have just one beef burger on their menu, containing cheddar, lettuce, white onions, pickles and a secret sauce. We ordered a double burger for 164 SEK (15.5 USD) and a portion of fries for 46 SEK (4 USD).

Our burger served looked really nice, with a deep crust on the patties and well-melted cheese. The Swedish beef was rich in flavour with beefy notes shining through in every bite. Unfortunately, the crown of the bun was cold and hadn’t been heated on the inside, which was a shame as we otherwise loved their phenomenal homemade sesame bun. It was very tasty and had a lovely texture with a slight chewiness, while still being easy to bite through. Their sauce was much nicer than last time, and tasted like a more mature and not as sweet burger sauce. It also added a lot of creaminess along with the cheese. The lettuce and onions were fresh and not too cold, but we found that their salty pickles didn’t fit very well here. We would have preferred a slightly more acidic version with more dill flavour to break through all the other rich ingredients. The fries were crispy with a nice potato flavour and just the right amount of saltiness that made it hard to stop eating them even though we were full.

Panem have really stepped up their burger game since our latest visit, and are getting closer to their sibling restaurants – thanks in no small part to their burger buns, which are really cutting edge. And don’t miss their desserts, which are the perfect finishing touch to an excellent burger meal.

Hantverksbageriet och caféet Panem öppnade under 2022 i Gamla Stan i Stockholm, där den välrenommerade Gustaf Mabrouk står bakom bakverken och sötsakerna. Vanligtvis hade vi blivit skeptiska av att hitta en burgare på ett café, men Panem är också en av flera restauranger som öppnats och drivs av folket bakom Barrels Burgers & Beer och Stigbergets Fot. Menyn innehöll en köttburgare samt en variant med kyckling och en med halloumi, så vårt val var enkelt. Panems Cheeseburgare är en klassisk skapelse med kött, cheddar, sallad, silverlök, pickles och dressing, och kostade 139 kronor för en enkelburgare och 159 kronor för en dubbel. Vi beställde även pommes frites för 39 kronor.

Brödet var egenbakat och samma som används på deras andra restauranger. Det fungerade såklart superbra till deras burgare och var lätt, mjukt och fluffigt samtidigt som det tålde rejäla mängder köttsafter och såser. Köttet var lite mindre och mer tunnsmashat hos Panem än på de andra restaurangerna, och detta medförde att det nästan var ett måste att beställa en dubbelburgare, då köttet tillsammans med brödet var stjärnorna i skapelsen. Osten var krämig och god, och grönsakerna var väldigt fräscha och krispiga. Vi saknade dock något som bröt av det köttiga och salta. Deras pickles var snarare en saltgurka, och saknade den syra eller sötma som behövts för att bryta av och lätta upp smakerna. Dressingen smakade som en smakrik majonnäs, och förstärkte burgarens djupa och umamitunga tonerna utan att faktiskt tillföra särskilt mycket eget. Pommes fritesen var i toppklass – välfriterade och otroligt smakrika – och ett oumbärligt tillbehör.

Panem vill medvetet servera annorlunda burgare än de som finns på syskonkrogarna, och det märks att de fortfarande letar efter den bästa vägen framåt. Det finns en del att finslipa på, men vi återvänder gärna för en burgare – och för att utforska resten av deras spännande meny.

The artisan bakery and café Panem opened in 2022 in Stockholm’s Old Town, helmed by the acclaimed pastry chef Gustaf Mabrouk. We usually wouldn’t pay much attention to a burger found on a café menu, but Panem is also a part of the same group that runs craft burger joints such as Barrels Burgers & Beer and Stigbergets Fot. Their menu consisted of a burger with beef, chicken or halloumi, so our choice was an easy one. Panem’s Cheese Burger was pretty classic, with beef, cheddar, lettuce, white onions, pickles and a sauce. It cost 139 SEK (13.5 USD) for a single-patty burger and 159 SEK (15.5 USD) for a double burger. We also ordered some french fries for 39 SEK (3.5 USD).

The buns come from their own bakery, and is the same kind that they use in their other restaurants. It worked great with their burger, of course, and was light, soft and fluffy while still handling loads of beef juices and sauces. The patties were a bit smaller and thinner than in their other burgers, and this made a double-patty burger a compulsory choice in order to let the meat and bread truly shine. The cheese was tasty and creamy, and the vegetables were very fresh and crispy. We missed something to cut through all the savoury beefiness trough, and we would have preferred an acidic (or even sweet) pickle as opposed to their salty variety to cut through and balance out the flavours. The burger sauce was like a tasty mayonnaise and only enhanced the deep umami flavours without adding much in itself. Their french fries were excellent though, and this well-cooked and tasty side-order is an absolute must.

We understand that Panem are looking to serve something different than their sibling restaurants, and we can definitely see that they’re still trying to find the best way to do so. There’s a few things that they still need to get right, but we’re happy to return – both for their hamburger and to explore the rest of their interesting menu.

🇸🇪 Mother of Wagon ★★★★☆

Mother of Wagon opened by Arboga’s train station in the summer of 2026, and is actually run by the mother of the owner of The Wagon Burgers & Brews in Stockholm. Besides the clever name, they also offered four burgers, all of which could be made vegetarian. We ordered a Cheeseburger with two 100-gram mustard-smashed beef patties, cheddar, onions, pickles, ketchup and dressing in a brioche bun. It cost 130 SEK (14 USD), and we also added fries for 30 SEK (3 USD).

The burger looked really good when it arrived, even if it had been assembled somewhat hastily with a lot of sauce. The flavours worked well, but all that sauce made it a little difficult to eat as the patties kept sliding around. The beef from a local farm in Örebro was generously seasoned and had plenty of flavour. However, it had been slightly overworked and was a bit too compact, and we would’ve preferred a more airy texture. The cheese had melted nicely over the patties, and we also appreciated that the fluffy bun had been nicely toasted on the inside, helping it hold together throughout the meal. We liked the finely chopped onions, while the pickles were crunchy, if slightly sweet. Although the mustard smash added plenty of flavour to the beef, we would’ve appreciated the acidity of American yellow mustard instead of the fairly sweet burger sauce. The fries came in a very generous portion and were thick and well-cooked, but slightly too heavily salted.

Mother of Wagon has managed to build a really solid foundation in just a few months, and the friendly staff also contributed to the experience. We’re really happy that it’s now possible to get a good burger in central Arboga.
