Wiberg’s Restaurang har stängt sin verksamhet.

Wiberg’s Restaurang slog upp sina portar under juni 2021 på en av Stockholms finaste adresser på Linnégatan, och titulerade sig själva som ett närodlat skandinaviskt koncept. På deras något spretiga meny har de en burgare kallad Smash Båstad som innehåller två köttpuckar på 75 gram, picklad silverlök och spetskål, saltgurka, grov senapsmajonnäs, lagrad cheddar och het lingonketchup, som serveras med pommes frites för 195 kronor.

Burgarens presentation gav ett minst sagt blandat intryck. Den var gediget monterad på en fin träbricka, men brödet var tillplattat och hade en gigantisk pinne som hade pressats genom alltihop. Efter vi hade avlägsnat den överflödiga pinnen satt burgaren faktiskt bra i handen, men vi kände direkt att surdegsbrödet var ganska stumt och lite torrt. Köttet gjort på högrev var relativt anonymt och saknade en ordentlig kryddning samt kändes lite för magert för sitt eget bästa. Lingonketchupen och senapsmajonnäsen var förvånansvärt passiva i sin smak, och bidrog inte alls till någon spännande hetta eller sting som vi hade hoppats på. Brödet saknade dessutom en ordentlig rostning på insidan och förlorade det mesta av sin textur halvvägs in i måltiden. Vi vill däremot slå ett slag för deras otroligt fina pommes frites gjorda på säsongspotatis. Kryddningen påminde om en moderniserad variant av klassisk grillkrydda, men detta passade utmärkt till de krispiga pommes fritesen.

Hantverksburgaren från Wiberg’s Restaurang är ingen total katastrof, men den saknar finessen för att rättfärdiga den saftiga prislappen.

Wiberg’s Restaurang opened their doors in June of 2021 at one of Stockholm’s best addresses on Linnégatan, proudly announcing their local Scandinavian concept. Their eclectic menu has a burger called Smash Båstad which includes two 75-gram patties, pickled white onions and pointed cabbage, pickles, a coarse mustard mayo, aged cheddar and a spicy lingonberry ketchup. It comes with an order of french fries and costs 195 SEK (22 USD).

In the looks department, the burger was a all over the place. It came on a nice wooden tray. but the bun was flat and there was a huge skewer sticking out on top. After removing it, the burger itself felt quite alright to hold, but the sourdough bun was rather hard and dry. The chuck patty was anonymous and could have done with more seasoning and a higher fat content. Both the lingonberry ketchup and the mustard mayo were surprisingly low-key, and didn’t bring much to the table in terms of heat or flavour. And since the bun hadn’t been toasted enough on the inside it started to fall apart half way through our meal. One thing we really did like though, was their excellent french fries made from seasonal potatoes. The seasoning reminded us of a modernised grill kiosk spice mix, which surprisingly enough worked great in this case.

The burger from Wiberg’s Restaurang isn’t a total catastrophe, but it really misses a few important points and doesn’t live up to its price.

Bar Luca is a cool and loud bar just a stone’s throw from the Opera House in central Sydney. They have been going viral for a while with one of their campaign burgers, which now has a permanent place on their menu. So when we were there, it was the obvious choice. The burger was called Blame Canada and consisted of a single beef patty, American cheese, maple syrup-glazed bacon, maple syrup aioli, poutine and fries inside the burger. The price was 20 AUD (14 USD).

Our burger still looked pretty good when it arrived, shiny from the maple syrup and with a patty with a decent crust. The beef tasted fine, even if it was a bit burnt in some places and would have benefited from a looser texture. The crown of the bun was a bit squashed, but it still held together surprisingly well and tasted great. The bacon was also unexpectedly crispy, and we liked the nice and flavourful maple syrup glaze. But it was very sweet overall with all the maple syrup, which literally dripped from the burger. This made the whole burger really sticky and quite difficult to handle – even if it also meant that we ate the whole thing at once. The fries that were under the patty itself were very soft and completely lacked crunch, probably because they were steamed by being placed directly in the burger. And we would have really preferred a bit larger cheese curds in the poutine, as the texture was a bit unappealing.

Blame Canada sounded very interesting on paper, and we can see why the burger has gone viral and become so popular. And even if everything was alright, it had too many technical mistakes to become a real favourite. But if you are in the mood for a sweet and sticky burger while listening to some loud music, Bar Luca is there for you.

Royal Stacks is a Melbourne-based burger chain that was founded in 2016 after their founder Dani travelled to the US and got a healthy dose of inspiration. They are still expanding, and currently have more than 10 restaurants that are decorated with plenty of well-known pop culture references. The five beef burgers on the menu are clearly inspired by Shake Shack, but with a slightly cooler attitude. We ordered a Bacon Bacon; a double burger with cheese, caramelised onions, double bacon, pickles, ketchup and mustard for 23 AUD (16.5 USD).

Our burger looked good, but we were a bit worried about the large amount of ketchup that was piled on top of the bacon. Fortunately, we were pleasantly surprised by how well the ketchup tied the flavours together, and the sweetness and intense tomato flavour really made their mark here. The beef patties were tender, tasty and well-seasoned, but the bun was a bit too soft and should have been toasted a lot more. Fortunately, it held everything together well, so it wasn’t a big problem. On the ingredients front, the cheese provided a welcome creaminess, and we also liked the strong dill flavour of the pickles – although we would have preferred them to be thicker sliced and to have had more of them. They were already gone halfway through the burger. The bacon was a bit too soft and would have benefited from being crisper, but despite the slightly pale appearance, it was cooked pretty well. The caramelised onions were also a bit too soft, and we would have preferred raw onions here for a more interesting texture. Overall, the burger had well-balanced proportions, although everything was a bit softer than we would have liked.

Royal Stacks is a nice Australian fast casual chain that serves well made and affordable burgers in a cool environment. They are definitely worth checking out the next time you’re in Melbourne.
