The Loyalist har länge varit ett namn i toppen när det gäller Chicagos bästa hamburgare, vilket kanske inte är förvånande med tanke på att deras systerrestaurang Smyth en trappa upp har tre stjärnor i Michelinguiden. The Loyalist – som då ligger i källaren – är en stilren och modernt inredd bistrobar med en meny som lever upp till förväntningarna. De erbjuder två olika hamburgare, dels en The French Smash med bland annat escargot-smör och dels deras klassiska Loyalist OG Cheeseburger. Vi beställde den sistnämnda som bestod av en rejäl köttpuck, american cheese, picklad och stekt lök och en lök-aioli i ett sesambröd. Den kostade 27 dollar (285 kronor) inklusive pommes frites.

Burgaren såg både lockande och inbjudande ut när den anlände, och vi kunde knappt vänta med att ta första tuggan. Köttet var saftigt med en tydligt djup köttsmak, och utmärkt medium well enligt kökets rekommendation. Köttet var dock lite kompakt för vår smak, och vi hade gärna sett att det var luftigare och mörare. Brödet var välbalanserat smakmässigt men kunde också ha varit lite mer fluffigt och med bättre stuns. Kombinationen av den stekta löken och lök-aiolin gav hamburgaren rika umami-toner, vilket verkligen lyfte smakerna. Och osten bidrog dessutom med en krämigt len smak, men föll lite i skymundan mot de andra smakerna. Efter några tuggor började vi verkligen uppskatta de rejäla smakerna, men slutresultatet var något ensidigt med all löksmak. Pommes fritesen var superkrispiga och väldigt goda, och vi var glada över att de ingick i priset.

The Loyalist serverar riktigt goda burgare som är väl värda att besökas. Men med tanke på det höga priset rekommenderar vi att du kollar in några av de högre placerade restaurangerna på våra listor om du bara hinner med några burgare nästa gång du är i Chicago.

The Loyalist has long been a top name when it comes to Chicago’s best burgers, which is perhaps not surprising given that their sister restaurant Smyth upstairs has three Michelin stars. The Loyalist – located in the basement – is a stylish and modern bistro bar with an inspiring menu. They offer two different burgers, a The French Smash with escargot butter, and their classic Loyalist OG Cheeseburger. We ordered the latter which consisted of a decently sized beef patty, American cheese, pickled and fried onions and an onion aioli in a sesame bun. It cost 27 USD including fries.

Our burger looked both tempting and inviting when it arrived, and we couldn’t wait to take our first bite. The patty was juicy with a distinctly deep beefiness, and excellently cooked medium well as per the kitchen’s recommendation. However, the patty was a little compact for our taste, and we would have liked it to be more tender. The bun was well balanced flavour-wise but could have been a bit more bouncier. The combination of the fried onions and onion aioli gave the burger rich umami tones, which really elevated the flavours. And the cheese also contributed a creamy smooth flavour, but was a little overshadowed by the other ingredients. After a few bites, we really started to appreciate the richness, but the end result was a bit one-sided with all the onion flavour. The fries were super crispy and very tasty, and we were happy that they were included in the price.

The Loyalist serves really good burgers that are well worth trying. But given the high price, we recommend checking out some of the higher ranked restaurants on our lists first if you only have time for a few burgers when visiting the Windy City.

🏴󠁧󠁢󠁥󠁮󠁧󠁿 @black_bear_burger ★★★★☆

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
