The Plimsoll är en pub belägen i Finsbury Park i de norra delarna av London, med en avslappnad och brokig inredd lokal som fylldes upp snabbt kort efter öppning. Bakom maten står kockduon Four Legs, som vi recenserat tidigare och som även drivit populära och omtalade popup-ställen i staden. Framför allt så har deras cheeseburgare fått mycket uppmärksamhet de senaste åren, så vi beställde självklart in en sådan.

Vår Dexter Cheeseburger hade en köttpuck gjord på hängmörat kött med extra fett, ost, lök, pickles, senap, ketchup och majonnäs, och kostade 11 GBP (140 kronor). Och när vi fick vår burgare så slogs vi av hur snygg den var. Allt smakade riktigt gott, men det visade sig att köttet var den svaga punkten. Vi hade hoppats att det skulle vara det bästa med burgaren efter alla skriverier, men det hade stekts för hårt och förmodligen även fått vila för länge. Smakerna satt som tur var fortfarande, men det var lite för kompakt för att övertyga oss helt. Vi hade även läst på nätet att de ibland gör små ändringar utan att meddela detta på menyn, och i vårt fall fick vi friterad lök i stället för finhackad rå sådan. Men det spelade ingen större roll, och den friterade smaken var helt klart trevlig. Brödet var stort och fluffigt, med en generös stekyta på insidan och en väldigt smakrik och smörig smak. Osten var krämig och våra enkla toppings var snyggt  fördelade. Picklesen var lite sötare än vad vi hoppats på, men passade ändå bra med osten och köttet.

Vi förstår varför The Plimsoll är hyllade, men även om vår burgare var väldigt god så kändes den lite slarvig. Vi rekommenderar fortfarande ett besök, och med bättre hanterat kött hade det här varit en minnesvärd hamburgare som kunnat slåss om en topplacering.

The Plimsoll is a pub located in Finsbury Park in North London. It has a relaxed atmosphere and a colourful décor, and filled up quickly shortly after opening. The kitchen is run by the chef duo Four Legs, who we’ve reviewed before and who have also run popular and well-known pop-ups in the city. Their cheeseburgers in particular have received a lot of attention in recent years, so we naturally ordered one.

Our Dexter Cheeseburger cost 11 GBP (13.5 USD), and came with a dry-aged beef patty with extra fat, plus cheese, onions, pickles, ketchup, mustard and mayonnaise. And when our burger arrived it looked phenomenally good. Everything tasted great, but the meat was a bit of a let-down. We had hoped that the patties would be the best thing about the burger after all the hype, but it was overcooked and had probably been left to rest for too long. Fortunately, the flavours were still there, but it was a bit too compact to completely bowl us over. We had also read online that they sometimes make small changes without announcing this on the menu, and in our case we got fried onions instead of finely chopped raw ones. But it didn’t really matter, and the fried flavour was definitely nice. The bread was large and fluffy, and had been toasted generously on the inside and had a very rich and buttery flavour. The cheese was creamy and our simple toppings were nicely distributed. The pickles were a little sweeter than we had hoped for, but still went well with the cheese and meat.

We understand why The Plimsoll is so highly celebrated, but even though our burger was very good, it felt a little sloppy. We still recommend a visit, and with better handled meat, this would have been a memorable burger that could have fought for a top spot in London’s rankings.

Thellas is a food truck in Gävle that we’ve heard a lot of positive things about since they opened in 2024. The menu at the time of our visit consisted of four beef burgers and a vegetarian option. We chose the classic ”Thellas Cheese” cheeseburger with double burger cheese, silver onions, dill pickles, ketchup, mustard and mayonnaise. A single patty burger cost 115 SEK (12.5 USD), but we ordered a double 120-gram patty burger with for 145 SEK (15.5 USD) and also added 30 SEK (3 USD) for french fries and 15 SEK (1.5 USD) for a chili mayo.

There was a long line of people waiting for their food, and when the burger was served we were greeted by a well-composed and inviting cheeseburger. The first bite was incredibly flavourful and juicy, with a very clear crust on the patties. The beef was well-seasoned with a generous amount of coarsely ground black pepper. And the creamy cheese was delicious and nicely melted over the beef. Unfortunately, the bun was a bit of a disappointment, because despite looking good, it had been toasted for too long on the grill and lacked the fluffy texture we expect from a brioche bun. Their own-pickled cucumber was delicious and added both acidity and crunch, and we would have liked to see more of it so that it was spread over the entire burger. All the sauces did their job without standing out and were also in the right amount, without any one of them overpowering the others. We also liked the generous portion of crispy french fries, and the smoky chilli mayo was tasty – although it could have been a bit spicier.

Thellas undoubtedly serve one of the better burgers we’ve eaten in Gävle, and the service from the guys in the food truck was excellent as well. We definitely recommend keeping an eye on their schedule and visiting them if you’re in the area.
