Som många av er vet så brukar vi inte recensera snabbmatsrestauranger och grillkiosker, främst för att de sällan utger sig för att servera något annat än enkla oldschool-hamburgare utan något större kvalitetstänk. Men när de hävdar sig och försöker mäta sig med andra hantverksburgare (som Circle K gjorde 2018) så måste vi såklart testa dem. Och nu när den anrika grillkioskkedjan Sibylla nyss fyllde 90 år så lanserade de sin första smashburgare kallad Smash Star, med 100 gram kött, ost, gul lök, rostad lök och en dragondressing i ett potatisbröd för 109 kronor. Vi beställde den med dubbelt kött för 35 kronor extra – en meny kostade ytterligare 30 kronor.

Vi hade hoppats att Sibylla skulle förnya sig fullt ut och använda färskt kött för denna burgare, och blev därför ledsna att höra att de bara tinade upp formpressade köttpuckar innan de smashade dem. ”20 minuter i kylskåp eller 5 minuter i mikrovågsugnen om det är bråttom”, som personalen sa. Som tur var det ingen kö under vårt besök.

Resultatet var katastrofalt, och det här var tveklöst den sämsta smashburgaren vi ätit i Sverige. Köttet hade en tvättsvampsliknande konsistens; poröst och tuggigt på samma gång med obefintlig stekyta. Köttpuckarna var torra, saknade kryddning och var inte ett dugg saftiga. Inget annat i burgaren lyfte heller kvaliteten över gatuköksnivå, med torrt bröd, oljig dragondressing, skarp gul lök och seg och tuggig rostad lök. Det enda vi faktiskt gillade var deras Future Fries – räfflade pommes frites som ändå hade både krisp och trevlig smak.

Vi har nu recenserat 600 restauranger här på Burgerdudes, och måste tyvärr meddela att Sibyllas nya smashburgarsatsning tillhör det absoluta bottenskiktet i landet. En så här pass erfaren kedja borde verkligen kunna förnya sig med förbättrad kvalitet, så vi hoppas att det inte dröjer 90 år till innan de gör det.

As many of you know, we don’t review fast food restaurants and grill kiosks here, mainly as they don’t claim to serve anything other than simple old-school burgers without any quality ambitions. But when they stick their head out and try to compete with artisan burgers (like Circle K did back in 2018) we have to try them out. And now that the Swedish grill kiosk chain Sibylla celebrated their 90 year anniversary they launched their first smash burger called Smash Star, with a 100-gram beef patty, cheese, onions, roasted onions and a tarragon mayo in a potato bun for 109 SEK (10 USD). We ordered it with a double patty for an additional 35 SEK (3 USD) – a menu with french fries and a soft drink cost 30 SEK (2.5 USD) more.

We had of course hoped that Sibylla would have taken some steps in the right direction by using fresh beef for these burgers, and were sad to hear that they just defrosted frozen and factory-moulded patties before smashing them. ”20 minutes in the fridge or 5 minutes in the microwave if we’re in a rush”, as the staff said. We guess we’re lucky that the weren’t any lines during our visit.

The result was terrible, and this was without a doubt the worst smash burger we’ve eaten in Sweden. The meat had the same consistency as a sponge; porous and chewy at the same time without any crust. The patties were dry, poorly seasoned and without any juiciness. None of the other ingredients managed to raise the quality over their previous fast food levels, with a dry bun, oily tarragon sauce, sharp yellow onions and chewy roasted onions. The only thing we enjoyed were their Future Fries – crinkle cut french fries with some nice crispiness and potato flavour.

We’ve reviewed 600 burger restaurants here on Burgerdudes by now, and have to say that Sibylla’s new smash burger is one of the worst burgers we’ve ever eaten. A chain with this much experience really ought to be able to reinvent themselves, so we hope it won’t take 90 more years before they do so.

Black Bear Burger is one of the veterans of the modern burger wave in England, and we have tried their burgers several times since our first review in 2017. Over the years, Black Bear Burger has received more and more attention and hype, both domestically and internationally, and today they are one of the most well-known burger restaurants in all of England. They have locations at nearly 10 places around London, and we visited their restaurant inside the Market Halls Victoria food hall and ordered their Double Miso Bacon Burger – the same burger that won them the National Burger of the Year 2025 award. The burger contained double patties, double cheese, smoked bacon and their miso butter mayo, and it cost 15.8 GBP (21 USD).

The burger looked exactly as we remembered it, with pre-formed patties and a pale bun covered in a generous layer of sesame seeds. The bun was soft and fluffy, but just like on our previous visits, we felt that the crust-like amount of sesame seeds took over both in terms of flavour and texture. The meat was of high quality as always and had a nice and potent dry-aged character that they are known for. The meat could have been juicier though, as it felt a bit too compact this time. The bacon was super tasty and crispy, just the way we like it, and the onion also contributed a nice texture. Their miso butter mayo was very flavourful with its buttery, salty, and umami-rich taste, but together with the bacon and the beef, the overall flavour profile was a bit too salty. We would have liked to see some kind of freshness to break up the saltiness for a more complete experience.

We are very happy that a veteran like Black Bear Burger continues to deliver high-quality burgers year after year, and they are still a safe bet when you are craving a really good burger in London.
